You missed the best char Kuey teow .. the best is at same row with UOB bank , 啊雄 炒粿条。。and the Chicken rice at Taman selera 名记鸡饭; as well as Ice Kacang.. haihhhhh
The char koay teow uncle has already retired around 4-6 months ago, sadly. The stall has been taken over by someone else. Taste is quite similar, but lacks an X factor that made the uncle's so legendary. Another food item to look out for at the food court is the kanpua/kolo mee. Pretty high standard for KL/Sel. Noodles are al dente and moist, and the char siu isn't just a piece of dried meat.
A piece of fat is included in each stick of stay so that the meat remains juicy during grilling. Some satay sellers will baste the sstay during grilling with oil for that purpose. I never tasted pork but was told pork has a more uniform distribution of fat compared to beef or chicken. Maybe the reason for your tendency to dislike a piece of fat in the satay.

Both the Yong Tau Foo/Fish Head Curry stall and the Satay stalls aren't great at all and very expensive especially considering the rental there is only Rm100 per month. The city counsel needs to be serious about their intention on a place like this. Is it to help the general public with more affordable food or just cheap rent for a handful of merchant?
Agreed. Locals WILL NOT have the YTF at medan selera, only foreigners or people who come from elsewhere. The only decent food at medan selera is the chicken rice and ice kacang near the malay stalls, not beside the chicken rice or in the middle island.

YTF RM2.50 per piece is day light robbery.
Even popular Ampang or Puchong 14th Mile YTF, which are also very fresh, do not cost that much.
