By the way Tina forgot to tell you that her sea bath, cou cou, mauby and the heat of the day quickly knocked her out cold with sleep at the outside patio table. It still looks good & am sure it still taste good. I can appreciate a family effort. Enjoy being in Barbados. Hopefully I should be their for the holidays this year. Wow tinaraine!! Good job done by your sisters. I would have put some butter all over the top of the cou cou and I usually put the pickle cucumber on top of my cou cou instead of hot sauce.
cou-cou looks nice, but I cut my okras smaller, sometimes I grate them, add them to cold water, and as soon as the water starts to boil, I remove the okras, and place them until I am ready to add them...I stir my meal with the plain okra water until cooked, and them add the okras, stir, cover and let seat for a few minutes....okras cook very quick, so the heat will finish cook the okras.....so, my cou-cou will be very yellow, and the green okras pop out ....not like some that they over cook the okras, making them dull, and the water red.....so the presentation is much nicer, and I hate mellow cou-cou...firm to cut and take up with the tip of a fork....in realiaty, cou-cou is a hand food...and your style is real Bajan style...NO Coleslaw, etc....sometimes, avacado, , yam, some green banana....and you are so correct...cou-cou without real Bajan pepper sauce, is incomplete
