Puerto Rico is where I was introduced to them. My Dad was in the Navy there for a few years. A local woman would fry these up in the morning and us school kids would buy them hot and fresh from her. They were so good. I just fried some up, love them.

We do the same in Cameroun and we call it " tapé tapé" which means " beat beat" since we hit it to get it flattened. WE mostly use the semi riped plantains and we eat it with some roasted or grilled fish with some onions on top. It's to die for!!!! It's amazing to see you do the same in Jamaica.

It's best to use a patchment paper than a towel. If I see someone using a towel I won't eat it. We called it in my home country "tapé tapé" I just made it.
I don't like the towel method either. Especially a dyed towel.No good. I used the peeled plantain skin . Also. Watch the amount of salt been used. ❤my green plantains.

I honestly learned how to use plantains today. Going to try this out. Looks great. Could eat these morning, noon and night. I love the crispiness and shape. I think if they were browner, that would be overdoing it. This is really a great video!
My mother use to soak the plantain in salt water before then she would cover the pot and would press them between the plaintain skin ,mess free ,lint free and no towel to wash after..

I like to use the yellow plantains and keep for 3 days before cooking. On 3rd day, prepare small sweet potatoes and cut the plantains and potatoes the same size. Line a shallow aluminum broiling pan with both swt potatoes and sweet plantains. Sprinkle with raisins, drizzle with honey to taste, sprinkle with cinnamon generously, add a pinch of freshly grated whole nutmeg and a sprinkling of light brown sugar. Put in preheated 350° oven, not too high for 30- 45 minutes. keep checking so it doesn't burn.And let bake till tender or slightly golden brown. Not only is this dish very tasty but it is very healthy as well! Enjoy from my own recipe!

I love fried green plantains! And I've been on a medical diet where I have to avoid as much fat as I can, so I'm not supposed to eat anything fried. But I'd love to sit down to a plateful of those delicious fried things! (Although I've seen people flatten the plantains with something like a tortilla press.) Now I want some hot sauce to dip them in 🙂
Thanks for your video. I have been frying plantains for decades but differently. This is a more a prolonged and complicated method and is called Tostones. If you use riper plantains and cut the slices thinner, fry them until golden brown and drain on on paper towels, it is much more simpler and less time consuming.. Then salt is not necessary because the plantains are much sweeter. But plantains can be fried at different levels of ripeness. This is for when they are greener.
The greener the plantain is healthier because you are not eating so much sugar , it's great for helping your body process glucose. Good for diabetics too as eating it like this prevents Diabetes from getting out of control.

I’ve been growing plantains for 20 years thinking they were an inedible variety of banana so I’ve been cutting the thing down at the base after they fruit and tossing in my compost pile. Today I went outside and cut one bunch off and looked up your video and did exactly as you said. Mel, it was delicious!! Now I have to decide what to do with the hundred or so I have hanging. Thanks. I picked up 2 Plantain for my first experence with Plantanos. I tried this with a single green Plantain. My first try was I could taste the salt - I must have used too much salt. I didn't taste much sweetness at all. BUT, it was an interesting experience. Now, I used our Fry Daddy and deep fried (in vegetable oil, Wesson Oil) the Plantain in the used oil we use for French Fries that maybe was the reason for little sweet taste. I have one more Plantain that I am going let well ripen and try this for a second time. Looking for the sweet taste.

You can also use the green plantains to make porridge for breakfast. Mash the plantains completely in a blender and boil in the cornmeal.

Mel you can cut the plantains out of the skins very carefully, and use the skins to flatten the plantains out nicely. Try it you will see.

Best to use baking paper or put the plantain on a plate and use another or cup to crush it. I find using a rag alot more unsanitary

Those were the days when you cook with a wood fire outside, get up at 5 am to go to the river to get water for cooking and cleaning and you bathe while you are there u gotta go to school as well, and you drink tea from a sweet milk can as a cup, and use gourd to dip up water, and cheese pan with the coffee or tea that’s the pot then banana leaf is the plate, and grand father use banana string as belt good old days, good old days no video games, no tv.

You can let them ripen you get the sweet flavor. So your yellow with black streaks-black will be ripe and sweet for plantain

Thanks. I picked up 2 Plantain for my first experence with Plantanos.
I tried this with a single green Plantain. My first try was I could taste the salt - I must have used too much salt. I didn't taste much sweetness at all. BUT, it was an interesting experience. Now, I used our Fry Daddy and deep fried (in vegetable oil, Wesson Oil) the Plantain in the used oil we use for French Fries that maybe was the reason for little sweet taste.
I have one more Plantain that I am going let well ripen and try this for a second time. Looking for the sweet taste.
the ripe plantains taste very different from the green, the ripe you will def have the sweet taste.
