Dr Hindehede in Denmark did similar experiments even earlier. One of his subjects lived on potatoes for a year. The experiment was supervised by 5 doctors, all specialists, of the staff of the medical school where Hindehede worked. They reported the subject, a young man named Madsen, stayed in good health and showed no loss of strength or muscle tissue even though he did manual labor as a janitor at the school and as a farm hand on his brother's farm. The doctor's work bore fruit in WW1 when he was in charge of food rationing for Denmark. He put the country on a vegetarian diet of mostly potatoes, black bread, barley porridge, cabbages, and whatever fruit and vegetables grow in a northern climate, with limited amounts of eggs and milk. During this period of time the death rate fell to the lowest ever recorded in Europe. Diseases like heart disease, blood pressure, diabetes, hardening of the arteries fell by 30% to 40% and were still falling when the experiment ended.
I grew up basically on Starches. We were not wealthy & we rarely had animal protein... except for Bacon... which I loved...still do... but Corn has always been my Fave Starch & I stopped eating Starches cause of the "carbs" are BAD. & Paleo this & Keto that... I remember the whole Carbs phobia time quite well. The distinction that probably was never made was between processed carbs and more natural carbohydrates. There was, at one time, a widespread fat phobia (probably still is). I once had an argument with a doctor about the benefit of avocadoes. When you think about it what did our species have to eat for thousands of years? I suspect the vast majority of foods available were carbohydrates. But we need a variety of foods got optimal health.
What about instant potatoes? I live on a sailboat. So boiling potatoes, which I prefer, takes a lot of battery power. But whereas making instant potatoes in hot water only takes 2 minutes. After months of eating mostly instant flake potatoes instead of real potatoes, especially with greens mixed in, I have to say I really like them too. Question is: how does the nutrition change with dehydration? Do I get any nutrients other than calories? Thanks!
It's perfectly fine. This is what he says on his webpage: " Preserving Potatoes The single disadvantage of the potato, compared to wheat and corn, is they cannot be stored and carried over from year to year in their harvested form because the tubers rot. Fortunately, various drying methods will preserve them as future food. Since ancient times, people of the Andes would “freeze-dry” potatoes. The process involved freezing, trampling by foot to remove some water and skins, and then refreezing in the cold night air. This product, known as chuño, would last in good condition for 10 years when stored in a dry, sealed room. Another traditional product is papa seca ("dehydrated potato"). The tubers are boiled, peeled, cut into chunks, sun-dried, and then ground into a starchy staple that is often eaten with tomatoes, and onions. These days, papa seca is consumed more widely than chuño and can be purchased in supermarkets. Sun-drying potatoes is a cottage business in India and Asian countries-this new growth industry provides an inexpensive way to preserve potatoes and to smooth out seasonal gluts." www.drmcdougall.com/misc/2008nl/may/potato.htm

I went somewhat same experience. I had only 100 lb potatoes I gleemed from a farmer who allowed us to gleem the field free. You find interesting ways to prepare them. Dr Mc Dougall, please tell some of us the correct ways to prepare potatoes. Many do not know to remove stem and eyes, cut off any greenish parts that are toxic...I agree they are a super food. I just think people need this info. Thanks!
interesting i think ive heard of this... so what about the 'methods' of how your 'cooking' certain foods? frying? microwaving? baking? grilling? is theyre a best way to use one of these? or will it depend on type of food?
Off course if you go on all potatoes, you will utilize all the calories you get from that. But that's unusual. People normally eat potatoes with a lot of proteins and fat. That's when it becomes problematic.
@@emh8861 ... He also said that adding the oil diluted the value of the potatoes. They didn't know any better, but now you and I know better. We also know that adding oil, interferes with glucose entering the cells, thereby instigating T2 diabetes/insuline resistance, etc. Pick a starch (potatoes or?) and add colorful vegetables. That's the McDougall plan. Don't need to complicate it or reinvent it. Eat when hungry and stop when reasonably full (satisfied.) I'm reminding myself too. Good luck.
My joint pains and body stuffiness increase when I eat potatoes. So how does one explain that? I strongly feel there is no "one size fits all" when it come to diet for humans. I wish there was. I would love to see what answer does Mr. McDougal have to my query.

Saying "yes" to potatoes Energy, micronutrients, versatility and just plain deliciousness make the case for potatoes to become part of a healthy diet. That's especially true when they're paired with foods high in protein and fiber and prepared in ways that capitalize on their zero-fat content. These two recipes are a tasty place to start: Low-calorie potato salad 1 pound potatoes, diced, boiled or steamed 1 large onion, chopped (1 cup) 1 large carrot, diced (1/2 cup) 2 ribs celery, diced (1/2 cup) 2 tablespoons minced fresh dill or 1/2 tablespoon dried dill 1 teaspoon ground black pepper| 1/4 cup low-calorie mayonnaise 1 tablespoon Dijon mustard 2 tablespoons red wine vinegar Combine dill, pepper, mayonnaise, mustard and vinegar in a small bowl, set aside. Combine potatoes, onions, carrots and celery in a large bowl. Spoon the dressing over the vegetables and toss until well coated. Refrigerate before serving. Nutrition for 1 serving (3/4 cup): 77 calories, 14 grams carbohydrates, 2 grams fiber, 127 milligrams sodium, 1 grams total fat, 2 milligrams cholesterol, 1 grams protein, 2 grams total sugars Roasted potatoes with garlic and herbs 3/4 pound small (2-inch) white or red potatoes 4 cloves garlic 2 teaspoons olive oil 2 teaspoons chopped fresh rosemary 1/8 teaspoon salt 1/4 teaspoon ground black pepper 2 teaspoons butter 2 tablespoons chopped fresh parsley Heat oven to 400 F. Lightly coat a large baking dish with cooking spray. In a large bowl, combine the potatoes, garlic, olive oil, rosemary, salt and pepper. Toss until the potatoes are well coated with oil and spices. Arrange the potatoes in a single layer in the baking dish. Cover with a lid or aluminum foil, and bake for 25 minutes. Remove the covering. Turn potatoes and bake, uncovered, until they're soft and slightly browned, about 25 minutes. Transfer to a serving bowl, mix with butter and sprinkle with parsley before serving. Nutrition for 1 serving (about 2/3 cup): 104 calories, 15 grams carbohydrates, 2 grams fiber, 103 milligrams sodium, 2 grams saturated fat, 4 grams total fat, 5 milligrams cholesterol, 2 grams protein, 1 gram total sugars
You can tell people to eat more fruits and vegetables all day, but the truth is, most people will not do it, why? Because a huge salad will not sustain your energy levels through the day, here is what I mean... I literally took that message to heart "eat fruits and Vegetables" so I will prepare myself a 3 pound salad every day, and right around two to three hours latter, I was starving to death, at least I felt that way, so what I did was to start incorporating starchy vegetables like, Squash, Beans, Rice, Sweet Potatoes, Potatoes, Cassava, Plantains into my diet, and when I did, I no longer had this problem because these foods will sustain me and more importantly, "THESE FOODS WILL NOT MAKE ME GO HUNGRY FOR AT LEAST SIX HOURS OF CONSUMING THEM"!!! Now, some will hold you up more than others, energy wise, but take cassava, beans and rice, or plantains for instance, every time I consume those, they will hold me up anywhere from six to eight hours latter... So this is a good way to convince people to eat more starchy foods, because they hold your energy levels up and prevent you from going hungry for lots of hours!!! Now, while I consume starchy foods, this only makes about 40 of my caloric intake, I also juice and consume around 128 fluid oz of juice every day in order to increase my antioxidant intake, along with the protein, vitamins and minerals, but most importantly, to increase my pythochemical profile, why? Because if you eat only starches, eventually all this starch running around your system will get converted into fat, and two, THEY ARE NOT NUTRITIONALLY DENSE LIKE FRUITS AND VEGETABLES... And last, healthy fats like real extra virgin oil, nuts and seeds, avocados, and coconuts will help you suppress your appetite and keep you feeling fuller for longer, what do you think??? By the way, I fast every weekend, so what ever excess I consumed during the week, will get burned off while water fasting only...
Yes, you are talking about the micro nutrients in green leafies and the macro nutrients in starchy vegetables or beans peas etc, we need both to sustain us but the potato is a vegetable that has all the amino acids and nutrients your body needs it is in fact a perfect food all by itself and starches do not turn into fats, they are burned by your liver which will always burn sugar or starches first and store fat from fatty foods such as nuts or avocado or oils so if you are to eat starchy veggies do not eat fatty foods with them
exactly ! so many friends I have that learned new ways to cook with no oil and the foods taste better; we can use some butter because it is resistant to heat. i am not against potatoes, I said "to take 70-90 % of the calories from carbs with oxidized free radical oils is not a good idea" including fried potatoes - if they are boiled, steamed with some butter, then it's great...Nothing from what I've said 1 year ago was offensive to this presentation ! I love Dr Mc Dougall & Dr Fuhrman as well :)
I have seen this before, where the plant given microwaved water shriveld up and the plant given regular water grew normaly.. (a very vague explanation, i forget all the science-term meat behind it, but get the basic outline) Tho my question is if this affects plants this way, does it still affect humans this way aswell? As we are different from plants? I usually reheat herbal teas and coffees (black) in the microwave, sometimes rice/almond milks
Dont let the vegans fool you -> ''The diet consisted of potatoes, supplemented with butter or pork fat with the addition of a few fruits (apples and pears); tea or black coffee and sugar were also occasionally taken. The amount of fat consumed was not accurately estimated, it varied from 120-150 g. daily.'' You cannot live without the fat soluble vitamins A,D,E,K.

Starch is an excellent economical food because it provides carbs, protein, vitamin, minerals, and fiber, GREATER THAN OUR HEALTH IT IS THE RIGHT THING TO EAT. David Perlmutter whines about this because of the carbs in potatoes but he is missing every other nutrient that makes the potato THE PERFECT FOOD.
Someone made a comment to me about a week ago about how eating an apple or any fruit for that matter, and starchy vegetables, such as potatoes all turn into to sugar. This person, who is diabetic said he limits his consumption of these foods because of the high sugar. HOWEVER, within that same week, he had cupcakes. the next week, went out to lunch at an Italian restaurant, and the next day went out for a coffee crumb cake. Hmmmmmmm SMH

Thank you.
A similar diet was done in Norway and the rates of death from spanish flu were a fraction of elsewhere in the world.

Do you know if Madsen had any fat in his diet, or did he eat only plain boiled or baked potatoes?
Potatoes rule in the plant based kingdom!
I grew up basically on Starches. We were not wealthy & we rarely had animal protein... except for Bacon... which I loved...still do... but Corn has always been my Fave Starch & I stopped eating Starches cause of the "carbs" are BAD. & Paleo this & Keto that... I got whip lash! I was browsing RUclips & ran into a video on Resistant Starches... which I had run into 4 orb5 years ago but didn't pursue it. BUT HERE & NOW, I was led toner McDougal & I feel like a kid in a candy store... and he doesn't Nix Salt & Sugar!!
I am feeling such changes in my mood, my cravings feeling a lot better . I hope the Joint benefits kick in Sooner rather than later!

You know I was on an all starch/vegan diet and it was the best I felt or looked in my life. All of a sudden after 5 years the diet stopped working for me. I started gaining weight, I felt life I was becoming allergic to my food. For years I looked for something that would help me feel like the vegan diet used to. It wasn't until recently that I learned about GMO's. Now I'm back on a vegan, organic, GMO free diet. I feel like I found the missing puzzle piece. I feel better than ever.;)
How do u know if ur food or potatoe is gmo
Were you able to lose the weight you gained?

Potatoes are a miracle
I love potatoes, and I love the McDougall plan. Thank-you, Dr. McDougall, for giving me permission to eat lots of potatoes.
I started eating baked potatoes every day recently. So good and cheap. Bought a 5lb bag for $2.

Well spud it means you can have more than 2 eyes.
Pretty cute potato.
I'm going to do a 14 day potato diet... should be interesting
Its awesome
Avoid the diet. It should be a lifestyle.
@@eara8426 wtf bro?

What about instant potatoes? I live on a sailboat. So boiling potatoes, which I prefer, takes a lot of battery power. But whereas making instant potatoes in hot water only takes 2 minutes. After months of eating mostly instant flake potatoes instead of real potatoes, especially with greens mixed in, I have to say I really like them too.
Question is: how does the nutrition change with dehydration? Do I get any nutrients other than calories?
Thanks!
It's perfectly fine.
This is what he says on his webpage:
" Preserving Potatoes
The single disadvantage of the potato, compared to wheat and corn, is they cannot be stored and carried over from year to year in their harvested form because the tubers rot. Sun-drying potatoes is a cottage business in India and Asian countries-this new growth industry provides an inexpensive way to preserve potatoes and to smooth out seasonal gluts."

I went somewhat same experience. I had only 100 lb potatoes I gleemed from a farmer who allowed us to gleem the field free. You find interesting ways to prepare them. Most of the time I ate them in French fry form with ketchup(which a friend gave me). I even ate them with mustard, again I was given that bottle. I had run out of ketchup. Potatoes are so great! Nothing like a good bake potato with the skin.
interesting i think ive heard of this... so what about the 'methods' of how your 'cooking' certain foods?
frying?
microwaving?
baking?
grilling?
is theyre a best way to use one of these? or will it depend on type of food?
yup, I'm eating potatoes while watching this! boiled and mashed with the water from the boiled potatoes and a wee bit of salt. yeah, I love salt!
is ok to steam in the microwave aswell? (without microwaving it in plastic of course)
Off course if you go on all potatoes, you will utilize all the calories you get from that.
But that's unusual. People normally eat potatoes with a lot of proteins and fat. That's when it becomes problematic.
So cut back the fat and protein
He said they added oil.
Still healthier then eating junk food tho thats why i never feel bad when i eat high carb foods Real Food
Good luck.
potato and water is what is good, u genius
My joint pains and body stuffiness increase when I eat potatoes. So how does one explain that? I strongly feel there is no "one size fits all" when it come to diet for humans. I wish there was. I would love to see what answer does Mr. McDougal have to my query.

I follow the starch solution. However the article mentions they also had butter, salt, sugar, pears and pork fat. Not exactly an accurate portrayal of the study...
Don't EVER expect truth from vegans. Veganism goes hand in hand with leftism and they are all pathological liars who want to hurt you.
He said they added fat and it didn't make it any more nutritious, just fattening.
I'm a Trump supporting Conservative and I'm trying to transition to veganism because I cant live with the level of suffering I'm causing to animals and their babies through my diet. A lot of conservative right wing Indians also avoid eating meat and harmfuly sourced animal foods for ethical reasons. Were not all left wingers. Yet I respect other people for whatever they are eating I'm here to love my neighbours and not judge them
@@trenxee1165No we don't go hand in hand with leftists. And you just have to eat a starch based diet to be healthy, McDougall says himself if you were to have a little bit of turkey at thanksgiving and an egg at easter you wouldn't be any less healthy. Emphasis on the starch based diet, not on perfect Veganism.

Saying "yes" to potatoes
Energy, micronutrients, versatility and just plain deliciousness make the case for potatoes to become part of a healthy diet. That's especially true when they're paired with foods high in protein and fiber and prepared in ways that capitalize on their zero-fat content.
These two recipes are a tasty place to start:
Low-calorie potato salad
1 pound potatoes, diced, boiled or steamed
1 large onion, chopped (1 cup)
1 large carrot, diced (1/2 cup)
2 ribs celery, diced (1/2 cup)
2 tablespoons minced fresh dill or 1/2 tablespoon dried dill
1 teaspoon ground black pepper|
1/4 cup low-calorie mayonnaise
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
Combine dill, pepper, mayonnaise, mustard and vinegar in a small bowl, set aside. Combine potatoes, onions, carrots and celery in a large bowl. Spoon the dressing over the vegetables and toss until well coated. Refrigerate before serving.
Nutrition for 1 serving (3/4 cup): 77 calories, 14 grams carbohydrates, 2 grams fiber, 127 milligrams sodium, 1 grams total fat, 2 milligrams cholesterol, 1 grams protein, 2 grams total sugars
Roasted potatoes with garlic and herbs
3/4 pound small (2-inch) white or red potatoes
4 cloves garlic
2 teaspoons olive oil
2 teaspoons chopped fresh rosemary
1/8 teaspoon salt
1/4 teaspoon ground black pepper
2 teaspoons butter
2 tablespoons chopped fresh parsley
Heat oven to 400 F.
Potatoes are the superior vegetable for many reasons they will always be the better vegetable.
Good evening I have a question, if you have leaky gut can you eat Patato. Is it not night shade! !!?

This comment aged well. @spudfit
I'd say Dr Mcdougall is doing well
Facts
Look up the man who ate nothing but potatoes and water for a year straight
Would this potato diet be ideal for a diabetic, or should they substitute the white potatoes with yams?
Have broccoli with swt potatoes. Cabbage too.
You can tell people to eat more fruits and vegetables all day, but the
truth is, most people will not do it, why? Because a huge salad will
not sustain your energy levels through the day, here is what I mean... I
literally took that message to heart "eat fruits and Vegetables" so I
will prepare myself a 3 pound salad every day, and right around two to
three hours latter, I was starving to death, at least I felt that way,
so what I did was to start incorporating starchy vegetables like,
Squash, Beans, Rice, Sweet Potatoes, Potatoes, Cassava, Plantains into
my diet, and when I did, I no longer had this problem because these
foods will sustain me and more importantly, "THESE FOODS WILL NOT MAKE
ME GO HUNGRY FOR AT LEAST SIX HOURS OF CONSUMING THEM"!!! Now, some
will hold you up more than others, energy wise, but take cassava, beans
and rice, or plantains for instance, every time I consume those, they
will hold me up anywhere from six to eight hours latter... So this is a
good way to convince people to eat more starchy foods, because they
hold your energy levels up and prevent you from going hungry for lots of
hours!!! Now, while I consume starchy foods, this only makes about 40
of my caloric intake, I also juice and consume around 128 fluid oz of
juice every day in order to increase my antioxidant intake, along with
the protein, vitamins and minerals, but most importantly, to increase my
pythochemical profile, why? Because if you eat only starches,
eventually all this starch running around your system will get converted
into fat, and two, THEY ARE NOT NUTRITIONALLY DENSE LIKE FRUITS AND
VEGETABLES... And last, healthy fats like real extra virgin oil, nuts
and seeds, avocados, and coconuts will help you suppress your appetite
and keep you feeling fuller for longer, what do you think??? By the
way, I fast every weekend, so what ever excess I consumed during the
week, will get burned off while water fasting only...

(a very vague explanation, i forget all the science-term meat behind it, but get the basic outline)
Tho my question is if this affects plants this way, does it still affect humans this way aswell? As we are different from plants?

Starch is an excellent economical food because it provides carbs, protein, vitamin, minerals, and fiber, GREATER THAN OUR HEALTH IT IS THE RIGHT THING TO EAT. David Perlmutter whines about this because of the carbs in potatoes but he is missing every other nutrient that makes the potato THE PERFECT FOOD.
Not really. Too many carbs
Mary McCabe yeah but no conversion to glucose nor insulin spike if eaten once chilled (starch resistant)
metrx330 my computer is very small and the letters are small i can hardly see them myself thats why i type in caps i will try to do better thanks!
Hmmmmmmm SMH
diabetics need to avoid fat+sugar; not sugar exclusively, however.
+James Marvosa cakes usually have white sugar and butter or oil, so it still better to eat a plain potato or a banana
