You have two small terminals on the starter solenoid and one large terminal. The big one is for the battery cable and the small one to the right of it is for the S terminal (start terminal) on the ignition switch. The small terminal to the left of the big one is what is causing your problem, the I terminal, you need to run a wire from that terminal to the + terminal on the coil. So, when you are cranking the engine it feeds a pure 12 volts to the coil to fire the motor, then when it gets started and you release the key from the start position, the ignition terminal on the switch will continue to feed voltage to the coil to keep the motor running. Run that wire and your problem is solved.

It seems like the fuel is draining back to the tank when the car have been sitting for a while, And maby that is why Jimmy needs to be cranked for a long time before there is enough fuel in the float chamber for Jimmy to fire?(It's typical that old mechanical pumps get dirt in the valves inside of them, Leading to the valves stop holding the fuel pressure when parked and the fuel siphoning back to the tank🤓) Just sharing my thoughts😉 I think it's so cool that you keep taking care of old Jimmy😎 Keep doing what you do👨🔧
Ignition coil not getting 12v while cranking, that's why it fires as soon as you let off starter. Also you might get pulled over for no license plate light.
Good chance that you will find no thermostat in there or it is stuck open. Very important that the engine gets up to operating temperature before it will run correctly.
If you haven’t done it already you should get a grease gun and hit all them zero fittings on the front end and drive shaft. Pump that old grease out get some life back in them universals. Sure you can lookup the grease points for that year Chevy on the internet.
Reach in above the gas tank and feel for the ground wire and wiggle it. It should make your gauge start working. That’s usually the problem it loses ground.
actually in cold climates white smoke is expected until the engine gets to normal operating temp so might not be a issue but if it has a sweet smell then the head gasket might have failed edit: watched to the end now holy smokes that much white smoke means def a head gasket failure or cracked block from water freezing if there was not enough antifreeze used
You should really start spraying the fresh water supply spigot at the rest areas with some bleach water. You never know if someone has touched it with their gloves after dumping or not.
See if you can recycle your used coolant or oil at the auto parts stores. Chains like Autozone, O'Reilly's, Advance Auto, etc should be able to take used fluids.
Tap the gas pedal a few times before starting on a cold day.
Sounds like your ignition doesn’t fire until you stop cranking. Distributor might be wired incorrectly.

That old gas was a little more kaboom than expected been there done that I can smell the burnt hair bud glad you're ok.
