RISOTTO with RED BEETS, GORGONZOLA and WALNUTS

Today I will try to make a recipe by chef Luca Pappagallo.
It's the first time I've ever tried risotto (better late than never) and obviously it's not quite as professional (spoiler: I forgot the walnuts) but I can assure you that it turned out really good.
