CRAB SOUP | BAHAMIAN COOKING
Ingredients
6 Crabs (cleaned)
4 Tbsp. Oil
1 med. Onion
1 Celery Stalk
2 Garlic Cloves
1 Tbsp. Thyme
1 Tbsp. Garlic Powder
1 Tbsp. Red Pepper Flakes
1 Tbsp. Browning
1 Maggi Chicken Bullion
Salt (to taste)
Water (1/2 pot full)
*Ripe tomatoes or 2 Tbsp. tomato paste. (optional)
4 Corn (cut up)
2 Med. Carrots
2 Green Plantains
2 lg. Sweet potatoes
2 Sticks Cassava
3 lbs. Ribs (bite size)
3 lbs. Ham (bite size)
Dumplings
3 cups flour
14 salt
*1/2 baking powder (optional)
1 cup water

Excellent tutorial. Agree that tomato (paste) can alter the flavour of a dish even though it's often used (many times in excess). Fresh garlic is an excellent addition. The Bahamian pronunciation of "plantain" is correct. (plan-tin, fount-in, mount-in, etc.) "Fount-ain" would be absurd. English is not a phonetic lang.
