VEGAN CHINESE ROAST DUCK 纯素中国烤鸭
To Make The Vegan Protein:
3 cups vital wheat gluten
1/2 cup chick pea flour
1 teaspoon baking powder (optional)
2 tablespoons brewers yeast (or use nutritional yeast)
2 1/2 cups water
in a large mixing bowl, put vital wheat gluten, chick pea flour and
baking powder. Gradually add water as you begin to knead the dough.
Knead the dough for 4 to 5 minutes. Shape into rectangular shape.
Preheat oven to 350 degrees (176 degrees C) Bake for 30 minutes.
After vital wheat gluten is cooked, it is known as "seitan".
In a large pot, preheat 1 to 2 litres of water at medium heat. Put the seitan into
the boiling water. Turn the heat setting down to low setting. Add 2 tablespoons brewers yeast or nutritional yeast. Simmer the seitan at low heat setting for 1 to 11/2 hours.
To Make The Dressing:
3 to 4 King oyster mushrooms
1 onion chopped
2 medium size apples in cubes
1 package tofu skin sheets
6 tablespoons chu hou sauce (or use Chinese barbecue sauce,
hoisin sauce or Chinese Oyster sauce)
or vegan soybean sauce
As the seitan is simmering, prepare the dressing for the vegan duck.
I'm using King oyster mushroomsfor this recipe, but you can use whatever
type of mushroom that you like. Cut the tops of the mushrooms in slices
and cut some of the main body of the mushroom in slices. Shred the rest of the mushrooms,
to give more texture to the dressing. In a large mixing bowl, put in the mushrooms, onions and apples and mix well. You can leave the skin of the apples on.
To Assemble Vegan Duck:
Line a baking tray with a sheet of tofu skin. Put the mixture of mushrooms,
onions and appless in the middle of the sheet of tofu skin. Cut the ends of the
seitan vegan protein, to use as drumsticks. Cut lengthwise, along the side of the
seitan, but don't cut all the way through, so it remains in 1 piece. Slather the
basting sauce on the sides and front and back of the seitan. Put the piece of seitan,
with the inside to cover the dressing mixture. Put 1 or 2 sheets of the tofu skin to
cover the top of the seitan piece. Wrap the drumsticks with small pieces of
tofu skin. Finish basting the tofu skin all over the vegan duck, including the tofu skin wrapped drumsticks.
To make the gravy, heat about 3 cups of the broth. Add salt and pepper to taste. Mix 3 to 4 tablespoons of cornstarch in 1/3 cup of water. Add cornstarch mixture slowly to thicken the gravy. Add more or less of the cornstarch mixture to desired thickeness. Bring gravy to a boil and stir well
before serving.
Preheat oven setting at 375 degrees F (190 degrees C). Cook vegan duck for 30 to 45 minutes.
Keep an eye on the tofu skin to see if it starts burning. If the tofu skin starts burning, turn the heat down, to about 275 degrees F (135 degrees C). Cut the seitan vegan protein into slices. Spoon
some of the dressing mixture on the seitan vegan protein. Top with vegan gravy. Serve with other side dishes such as potatoes, vegetables and biscuits. Enjoy!

The first time I ever used the fork technique was on vegan pulled pork as well. Then it was for Three Texture King Oyster Mushroom Stir Fry and now, for this Vegan duck recipe. This is one of my favorite mushrooms.

Cool recipe, I want to try this! Can you do a video sometime about how sauces are made in a Chinese restaurant. Do you start with a master sauce and modify it for the specific dish? I'm talking about sauces like General Tsao, sesame, orange, garlic. these sauces all seem fundamentally very similar. Thanks.
Great suggestion! I have been meaning to do a video on different soy sauces and other sauces. You are correct, most sauces are very similar. For example, chili soy sauce, is just soy sauce with chili added. Orange soy sauce is just soy sauce with orange added. Japanese ponzu sauce, is just soy sauce with lemon added. For me, most of the time, I just use light soy sauce, dark soy sauce, Chinese oyster sauce and my own homemade chili oil. So if you have a recipe for orange sauce, I just use my regular sauces and just squeeze some fresh orange. Another example, instead of buying ponzu sauce, I just add some fresh lemon to light soy sauce. But sometimes, buying ready made sauces is handy if you make a lot of recipes with those sauces. I'm sorry, that's not close to being a roast duck. I feel a little bad for vegans since they've never had real roast duck.
Of course, you are correct. Nothing can match the duck fat rendering in a real duck. From my understanding, a true vegan will not eat any animal, even if it tastes good, because they support the rights of animals. This is the reason I cooked this vegan duck for a vegan.
