- Wanted a summer dessert and haven't made a keto cheesecake it awhile. Rhubarb is a little higher in carbs so I didn't make a big, fat cheesecake and more of a cheesecake bar with my 0 carb crumble on top.

Rhubarb Topping
16oz./3-4 Cups of 2 inch Pieces of Rhubarb- Fresh is best!
160-200g/1-1 1/4 Cups Allulose (to taste)
Squeeze of Lemon or 2 True Lemon Packets
Splash of Water to coat the bottom of pan and prevent burning
Graham Cracker Crust
45 g Coconut flour (about 6 Tbs.)
10 g Oat Fiber (about 2 Tbs.)
16 g Egg white protein powder (about 2 Tbs.)
48 g Golden Monkfruit sweetener (my preferred can use anything granular) (1/4 Cup)
1/2 tsp. Ground cinnamon
1/4 tsp. Xanthan gum
5 Tbs./2.5oz/70g Salted Butter (melted)
1 tsp. Vanilla extract
Pinch of salt if using unsalted butter
Crumble Topping
144 g/3/4 Cup Golden Monkfruit/Erythritol (can use any alternative sweetener)
60 g/3/4 Cup Unflavored Whey Protein Isolate (I like Isopure)
60 g/1/2 Cup + 2 Tbs. Oat Fiber
5-8oz./140-224g/10-16 Tbs. Melted butter (I used salted, if using unsalted add 1/4 tsp. Salt)
Cheesecake Filling
2 blocks/16oz/2 Cups Cream Cheese (room temp)
96g/1/2 Cup Granular 1:1 Alternative Sweetener or a tiny bit of Stevia/monkfruit
2 Eggs (room temp)
2/3 Cup Sour Cream
2 tsp. Vanilla Extract
1/4 tsp. Xanthan Gum or a bit more until a thick batter forms

320 Calories
28g Fat
35g Total Carbs
8g Fiber
24g Sugar Alcohol
3g Net Carbs
11g Protein

I know strawberries add carbs, but I'll probably add some to the rhubarb layer. I just love that combination... as many folks do! When I bake for myself, I'd rather LOVE the end result. If not, it will go to waste!

I always have moisture issues when I use parchment for cakes... Always... So I'll bet thats why your crust got soggy.

It's now the 4th time I make your brownie recipe. It's that delicious! I tried this time to make them without any butter and substituting for Skyr yogurt (very similar to Greek yogurt) and Believe me they're better! So so good 😊
Can I ask you if your recipe for pumpkin bread would work if I substitute pumpkin puree for peanut butter? I love peanut butter cake but you don't have any recipe for that and I wonder if it could work with the same measurements of the pumpkin bread.

Awesome! Thanks for the tip! I would try to use my vanilla cake recipe and replace half of the butter with peanut butter and use 4 oz of peanut butter to replace part of the buttermilk. Let me know how it tyrns out! Hope you enjoy the cheesecake recipe as well! Thank you for the lovely comment!

Contact the Serious Keto guy. I forgot his name. He just got a new lavalier. Also, you could contact High Falutant low carb. They both sound great. Throw out that mic. When it went out you sounded better. When you went back to the mic it sounded bad. I know of some good ones by Rhodes but they are very pricy! Great video. I love your videos so I'm not saying this as the criticism. But maybe just to help you out. They are hard to watch because for some reason your videos have a buzzing on them the whole entire video all the way through. Not sure what that is from

Thanks. I put a dehummer and noise reduction on the video, I can only hear it when I listen to it over 50% volume. But yes like I said I need a new wireless lavalir microphone just don't know which one to buy, there are so many options and all have good and bad reviews. Hate wasting money over and over.

Hi Alicia I was going to attempt to make an Apple pie with your recipe but wanted to know if I can make the pie dough in advance and keep frozen, if so do I thaw it before putting pie filling? Does the bottom crust have to be pre baked?
For the filling can I make that ahead and keep refrigerated day or two prior?
Would I use the same pie dough recipe for top?
Your feedback is invaluable
You can keep it frozen for awhile, you don't have to thaw it. You can make the filling ahead I would just warm up the filling so the filling will get bubbly in time for the crust to be done. You can use the same dough for a top crust but it makes a slice pretty high in carbs. That's why I did my 0 carb crumble instead of a second crust. Hope you enjoy!
