    *****
    Ingredients Required:
    *****
    Oil, 2 Tbsp
    Shahi jeera/ jeera/ cumin seeds, 1 Teaspoon (amzn.to/2vfU27u)
Onion, 1 Medium sized ,chopped into small pieces
    Salt, as per taste
    Ginger Garlic paste, 2 Tablespoon
    Turmeric Powder, 1 Teaspoon(amzn.to/3biHM6R)
    Chicken, 2 Lbs
Red Chili powder/Cayenne Powder 2 Tbsp (Skip or use lesser quantity as per taste.)
    Garam Masala powder, Half Tablespoon
    Coriander Powder, 1 Tablespoon
Coconut Powder, 1 Tablespoon (Substitute with coconut milk for a creamier finish)
Cilantro, Half bunch, chopped, for garnish (Optional)
    Steps:
    1. Turn on Saute mode.Wait for liner to heat up.
Add 2 tbsp of Oil.Then add 1 teaspoon of Shahi Jeera or cumin
Once the cumin starts to splutter, throw in the onion diced. Add salt to help the onions cook faster. Then add 1 teaspoon of turmeric powder and 2 Tbsp of Ginger garlic paste and cook till raw smell goes away.
    2. Next throw in 2 lbs chicken and add 2 tbsp of red chili powder. Give it a good stir.
    3. Cover liner with a lid and adjust the IP’s ‘saute’ to low.Let it cook for 10 mins.Give the occasional stir.
    4. Then add half a tablespoon of Garam masala powder and 1 tablespoon of Coriander powder.Add at least half a cup of water and close the lid. Hit ‘Manual’ or ‘PressureCook’ mode and set timer to 2 mins. Make sure whistle is in sealing mode.
5.Do a quick release and open the lid.Turn on Saute mode and Add around 1 tbsp of coconut powder.Let it simmer for around 5 minutes. After simmering for a while, you will notice the oil start to separate from the curry base.Add chopped cilantro and hit cancel.
    Serving Suggestions:
Serve over rice or with Rotis/Tortillas.
Chopped Onions/lime as garnish. Yogurt raita to make it mild.
Curry goes well with Jeera Rice( • Instant Pot Jeera Rice... ) or Lemon Rice( • Instant Pot Lemon Rice... )
Wine Pair: Syrah/Loire Valley Cabernet Franc

I just got married and received an instant pot as a gift (having never cooked before!). I don’t live near any family and had to cook something for dinner. I searched for and Indian IP recipe & this was the first thing that popped up. I watched it, made a grocery list, went shopping and followed your recipe as closely as I could. My husband loved it soooo much, he wanted me to make it again the following day! Thanks for your easy to make & easy to follow recipes! I’ve watched many of your recipes that look easy/ we would like & I can’t wait to start trying them out! 🙂

I cooked this and it is very tasty. It was really simple and quick actually!
I didn’t have cumin so I used a tiny bit of curry powder and I didn’t have coconut powder so I used a bit of coconut milk.
I added a bit of salt and I don’t think I should have done that.
Definitely the best tasting curry I’ve ever made from following a RUclips video and the easiest too. 9/10!

    Sandhya,
I followed your chicken curry recipe and made it this evening but I've made a few changes: I omitted the red chilli powder and have added 5 fresh bird's eye chilli peppers, a medium tomato and 6 green cardamom pods. The aroma was so tempting that I could've barely waited to have my dinner.
I had this flavourful dish on a bed of white rice and a lovely garden salad; I must say that it was very delicious!
Thank you again for this wonderful recipe. I'll continue to make many more of your tasty recipes. God bless you 🙏💗💐

Incredible! You are such an amazing cooking teacher. I did make a few changes based on what I’ve seen in some other recipes but pretty much followed your steps to a T. I sautéd the onions in cumin seeds black pepper small cinnamon stick and 1 bay leaf..little ghee and olive oil. I mixed red chili with smoked paprika for little less spice but it was still pretty spicy lol ... also sautéed on low at very end rather than normal after i added 1.5 tblsp coconut milk.. used about 1.5 pounds of skinless bone-in thighs. My place smells amazing and this recipe is amazing. Thanks so much for your expertise ...I love my instant pot. Chicken came out incredibly tender, wow! I garnished with mix of fresh parsley and cilantro

Curry is also a combination of Indian spice ingredients (like turmeric, gheera, etc.) So she was actually creating the “curry mixture” from its separated ingredients.
