I have missed your videos. The meals you prepared were good ones to add to any meal plan rotations. Some are new to me. You could also freeze any extra bananas for banana (+/-walnut) bread. I use them out of my freezer when needed and it doesn't alter the taste of the recipe. You have a great YT voice and your confident in what you present. Hope to see more of your videos. To extend the life of your salad and use in another way you could saute the salad at the end of the week with some onions, salt, pepper and whatever else maybe over some rice with an egg.

Great video! I usually save soup in serving portion jars, and carry them to work with me. Can't wait to try all your recipes, they look simple and yummy. Still, only a salad for dinner isn't enough for me. A grilled cheese sandwich would complement it nicely, I think.
That salad looked AMAZING.....I love olives too! People really can eat for much less than they do. And it requires a little planning and effort, but it's a ton better for you as well as delish!
I think you gotta try it! It will probably just have a denser/more crumbly texture. The corn flour is just a finer grind, so there's a softer/lighter finish.
RE: lentil soup. 1) There was a missed opportunity with you carrot and onion peels and off cuts, as well as the peels of garlic. Looks like you fed it to the rabbits instead. Save all of this in a plastic bag or tub in the freezer. Add to it as time goes (no cruciferous veg, or potato peels) and once full-make your own veg stock for FREE. 2)You made your own ck stock. Awesome! I assume that you defated it before storing in the quart jar. Save the fat. use THAT to saute the onion and carrot and create a delicious soup base (read commercially canned-they also use the fat for flavor) 3) you suggest adding salt/pepper to taste. Lentils are naturally "peppery" and most* can just skip the pepper. RE: muffins. 1) if you have a recipe for 12 muffins and come up short, decant a bit from each of the overfilled muffin tins and redistribute the batter so that you DO end up with 12. You now have the intended 12 portions instead of 11, in this video. 2) invest in a rubber spatula and really scrape your bowls. You will be amazed at just how much food is being left behind and wasted-perhaps enough, in this case, to fill the 12th muffin tin. RE: salad:1) if making salad or simply storing any greens, line the bowl or bag first with a kitchen terry cloth towel. It will absorb any moisture and preserve the greens. I currently have 3 week old greens that look freshly picked, as a result of this hack. 2) grab a small jar and meal prep your salad dressing for the week Re oats: 1) compare costs to sourcing milk. a) buy just a quart b) buy a 1/2 gallon or gallon, decant a quart's worth for the week, freeze the rest in quart amounts for future use c)buy a quart of UHT aeseptic boxed milk, lasts forever d)move to reconstituted dry milk and mix a small portion ahead, as needed. HTH
