A profile length is whatever length the 2x2 wood was cut into. You could even specify the length you want at a sawmill. Most likely, you would acquire the wood after they have been cut - take the individual lengths of the wood, then get the average; this average becomes your AVERAGE PROFILE LENGTH
The 2m added to sides of the perimetre is to give a working space for excavation and what not, between the trenches and the setting out profiles. The 2m can be less or more depending on the space requirement for the project.

The 2 by 2 wood can be reused mostly as braces; think oversite concrete perimetre boards, wood formwork for columns, lintels, staircase formwork, ...
Please what's the difference between the profile and pegs?
Pegs go into the ground, profiles go ontop the pegs
