Love your cooking Chef Morris. Just started looking at your vids, but you feel like a part of my family. When you ask questions, i litereally answer you back. This is not how i learnt to make stew though. A bit different. Meat is seasoned like you, but without the browning included. I heat about 2 table spoons of cooking oil to smoke point, then add about 3 tablespoons of brown or white sugar. when this starts to bubble and get dark, it is stirred to make sure the mixture is even while bubbling. The meat is added to the pot, and stirred, to make sure that it all gets coated with the now carmelized, browned mixture. This is left to sear in its own juices for about 3 to 4 minutes. Warm water is then added, to continue the cooking process, but not to fully cover the meat. The pot is covered, and left on medium heat. Further water is added as necessary, but it must now drown the meat, This is to maximize on the meat flavour. Seasonings are added as desired. Irish potatoes are optional, but are added when the meat is about half way cooked. I saved some of my onions, sweet peppers etc, to add in about 5 minutes to end time, so that i get bright, coloured alive looking veggies. Cooked until meat and potatoes are tender, with that nice, thick, rich gravy.
