If u want the sambal to be not too spicy without adding so much sugar u can add more onion n less dried chillies. The sambal will be sweeter from the taste of d onion. Ichang has become nasi lemak masterchef n Malaysian food Ambassador. Good job Ichang n jimmy... proud of both of u. Congrats!!!

In Malaysia usually known for 3 types of chillies (1)Wrinkly and bend " so spicy (2) wrinkle but straight = spicy (3) no wrinkle smooth = not spicy at all. For Ichang I think they use chilli from china which is no wrinkle and no spicy.. they must hv made a research beforehand

Actually when we serve nasi lemak on banana leaf,,we put on the dull side not the shiny side as the shiny side or outer layer has waxy as it is waterproof.the dull side or inside side is more suitable.this is information i gather as my mother is a nasi lemak seller most of her life and i get to eat ns lemak everyday during my school days.

The duck fist is really a good technique to teach people. 😂 However, I think there is mistranslation on the name of ‘nasi lemak’. While ‘lemak’ can be translated as ‘fat’ it also can be translated as ‘creamy’ to described the taste and texture. The second one makes more sense as there are other Malaysian foods that using the word ‘lemak’.
I am from TamilNadu India. We eat food on banana leaf..sambal is a everyday dish in srilankan tamil cuisine...it really nice to see the similar culture of ours..

Hi IChang& Jimmy.. just my 2 cents, maybe u can saute the chili paste first with low heat (longer time to cook, but taste better), and add sugar to make the sambal more red...later u can add the onion+anchovy paste after the chili paste has been well sautè ( in malay we call "terbit minyak" or "garing", means the chili paste is well sautè). By this way, u can reduce the amount of chili paste but still your sambal looks red/dark red, since the dried chili u used looks hotter/pedas... similar with dried chili in Japan. I used to stay in Japan for almost 9 years before, and everytime i want to make sambal using those kind of chili, i used only a little. Pedas: I cannot😂

A lil bit tips for u both. When u blend it, put lil bit of oil like half of a small cup depends on how much u want to make it, it will make ur sambal smooth shining n more sedap juga.

I think LEMAK is RICH in taste sense. Nasi lemak in logically sense is the rice with rich taste because of the coconut milk. "Nasi yang rasanya berlemak". From Kamus Dewan Bahasa: Lemak: 3. Mn: sedap atau enak (rasa, pendengaran, dll). 3. Minangkabau: good and delicious (taste, hear, etc). Not many Malaysian know about this, they also think LEMAK is FAT.

I Chang, you forgot to put salt in nasi lemak. You can put ginger, pepper corn and fenugreek too, according to Kedah home made nasi lemak. Nasi lemak also known as coconut rice, not fat rice.

Ichang, you don't need to put lemongrass in your nasi lemak. Only pandan leaves will do.

I think LEMAK is RICH in taste sense. Nasi lemak in logically sense is the rice with rich taste because of the coconut milk.

not sure if you're aware of this.. a bit of salt will enhance the taste of coconut milk.. the rice will taste more milky and tasty.. same goes to any 'masak lemak'.. put some salt👍👍

I Chang, you forgot to put salt in nasi lemak. You can put ginger, pepper corn and fenugreek too, according to Kedah home made nasi lemak. Nasi lemak also known as coconut rice, not fat rice.
