    Ingredients:
    For the Shrimp Marinade:
    500 grams shrimp (peeled and deveined)
    1/2 cup yogurt
    1 tablespoon ginger-garlic paste
    1 teaspoon red chili powder
    1/2 teaspoon turmeric powder
    1 teaspoon biriyani masala
    Salt to taste
    For the Rice:
    2 cups basmati rice
    4 cups water
    2-3 green cardamom pods
    1-inch cinnamon stick
    2-3 cloves
    1 bay leaf
    Salt to taste
    For the Biriyani:
    2 large onions (thinly sliced)
    2 tomatoes (chopped)
    1/2 cup fresh cilantro (chopped)
    1/2 cup fresh mint leaves (chopped)
    2 green chilies (slit)
    1 teaspoon biriyani masala
    1/2 teaspoon turmeric powder
    1/2 teaspoon red chili powder
    1 teaspoon cumin seeds
    2 tablespoons ghee
    3 tablespoons cooking oil
    1 cup fried onions (for garnish)
    A few strands of saffron soaked in 1/4 cup warm milk
    Juice of 1 lemon
    Salt to taste
    Instructions:
    Step 1: Marinate the Shrimp
    In a bowl, mix yogurt, ginger-garlic paste, red chili powder, turmeric powder, biriyani masala, and salt.
    Add the shrimp to the marinade and mix well. Let it marinate for at least 30 minutes.
    Step 2: Prepare the Rice
    Rinse the basmati rice thoroughly until the water runs clear. Soak it in water for 30 minutes, then drain.
    In a large pot, bring 4 cups of water to a boil. Add cardamom pods, cinnamon stick, cloves, bay leaf, and salt.
    Add the soaked and drained rice to the boiling water. Cook until the rice is 70-80% cooked (the grains should still be a bit firm). Drain the rice and set aside.
    Step 3: Cook the Shrimp
    Heat 2 tablespoons of cooking oil in a large pan over medium heat. Add the marinated shrimp and cook until they turn pink and opaque. Remove the shrimp from the pan and set aside.
    Step 4: Prepare the Biriyani Base
    In the same pan, add 1 tablespoon of oil and 1 tablespoon of ghee. Add the cumin seeds and let them splutter.
    Add the sliced onions and sauté until they turn golden brown.
    Add the chopped tomatoes and cook until they soften.
    Stir in biriyani masala, turmeric powder, red chili powder, and salt.
    Add the cooked shrimp, chopped cilantro, mint leaves, and green chilies. Mix well and cook for 2-3 minutes.
    Step 5: Layer the Biriyani
    In a heavy-bottomed pot, start with a layer of the shrimp mixture.
    Add a layer of partially cooked rice on top of the shrimp mixture.
    Drizzle some saffron milk, lemon juice, and a few teaspoons of ghee over the rice.
    Repeat the layers until all the shrimp mixture and rice are used up, finishing with a layer of rice.
    Sprinkle the fried onions on top for garnish.
    Step 6: Dum Cooking (Steaming)
    Cover the pot with a tight-fitting lid. You can seal the edges with a dough made of flour and water to ensure no steam escapes.
    Cook on low heat for 20-25 minutes. Alternatively, you can place the pot in a preheated oven at 350°F (175°C) for the same duration.
    Once done, turn off the heat and let it rest for 10 minutes before opening.
    Step 7: Serve
    Gently fluff the biriyani with a fork, mixing the layers.
    Serve hot with raita, salad, or your favorite side dish.
