  • Creamy Spinach Salmon with Cherry Tomatoes (Stovetop Version)
    Ingredients:
    • 4 small salmon fillets
    • 2 cups fresh spinach, chopped
    • 1 cup cherry tomatoes, halved
    • 1 cup heavy cream (panna)
    • 2 cloves garlic, minced
    • 1 tablespoon olive oil
    • Salt and pepper to taste
    Instructions:
    • Prepare salmon: Season salmon with salt and pepper.
    • Cook salmon: In a large skillet over medium heat, cook salmon fillets in olive oil until browned on both sides, about 4-5 minutes per side. Remove salmon from skillet and set aside.
    • Sauté garlic and spinach: In the same skillet, add garlic and cook until fragrant. Add spinach and cherry tomatoes. Cook until spinach wilts and tomatoes soften, about 2-3 minutes.
    • Make sauce: Pour heavy cream into skillet. Let it simmer until slightly thickened, about 2-3 minutes. Season with salt and pepper to taste.
    • Combine: Add salmon back to the skillet, spooning sauce over the top. Cook until salmon is heated through, about 2 minutes.
    • Serve: Serve hot, garnished with lemon wedges.
