Corned Beef and Pickle Dip
12oz canned CORNED BEEF
1 cup finely chopped PICKLES
16oz SOUR CREAM (or sub CREAM CHEESE)
1 Tbsp dried minced ONION
½ tsp BLACK PEPPER optional:
CREAMY HORSERADISH or chopped pickled JALAPENO to taste
I use about 1 Tbsp of each in the video recipe
Serve dip with crackers or sliced veggies
How to make Corned Beef Party Dip
I like to use 16 oz. of sour cream for this recipe, but you can substitute plain Greek yogurt or cream cheese, or use a mixture of these ingredients. If using cream cheese, set it out to soften.
Finely chop some dill pickles, or use a premade relish.
I like to add chopped jalapenos or some creamy horseradish for heat, but that’s optional.
In a large bowl, combine all of the ingredients until well mixed. If you make the dip ahead of time, it will allow for the flavors to come together, but it’s fine to eat right away.
Serve with crackers or sliced fresh veggies like celery, carrot, and bell pepper. It’s a heavy dip, so it balances well with fresh veggies, and it’s very filling.

@@samanthaulangca8965 slice them about 12mm thick, 1/2 inch, dredge in seasoned flour, then egg wash, then dredge in 1 part seasoned cornmeal, 2 parts seasoned flour mix and fry at 350/375 until golden brown, bout 2 or 3 mins per side. I usually pan fry them but you can deepfry them as well.
Corned beef cans are not just a lot of fun to open, but also an incredibly smart design. The cans are slanted so the meat slides out easily when you apply pressure to the sides, but the slight difference in diameter at the cut means that you can put the detached lid back on if you don't use all of it. Depending on the make, it's a really good fit too.
I wish more products were designed around good use and versatility instead of just making them foolproof.
This is the can of a thinking man. Not as clumsy or random as a pull tab. An elegant can... for a more civilized age.

This is the first time I have seen canned corned beef used as a dip! I got to try it!
Try Aldi and you can get lower-priced but really tasty Brookdale canned corned beef. My favorite way to use it is to slice it cold, then put it on a sub roll with either mustard or Miracle Whip. You can get 8-10 slices out of a can, which will make 4-5 sandwiches, so it's not only tasty, it's economical. Enjoy!

I love this stuff, it is really great. I would get mad when the key would be missing! The key is the fun part of opening it up. But it is really good sliced, fried and on bread with mustard.
I meant to mention to be sure you get the key when you buy it!--one can I picked up off the shelf and put in my cart didn't have a key on it...it's really not on there very securely. A regular can opener does the job pretty handily, though.
We love canned corned beef, my mom has been buying it all my life( and that's quite awile,lol😁) She usually eats it sliced, or in hash, I never thought to do something like this with it. I make a cheese ball for the holidays that's cream cheese, chopped deli corned beef, green onion, and rolled in chopped pecans- it's delicious, I'm thinking I will try it with this style corned beef next time! ah!---chopped pecans--that is a fantastic suggestion. When I make this dip with hand chopped pickles instead of relish, the pickles add a better texture, but pecans would be even better

I simply LOVE your method of instruction. You explain the fundamentals, you're relaxed and funny, and most importantly.....you give optional ingredients for those of us whose kitchens aren't grocery stores wherein we've got a warehouse ful of a myriad of ingredients. Most channels don't give options. I don't have the tolerance to run out and buy a pound of ginger for example, for use in a one-time recipe. And then I've gotta find other recipes before that ginger rots.
Here's a perfect tip for you to solve your problem with not using creamed cheese in dips...you're going to love this. Freeze the creamed cheese then thaw it. The flavour doesn't change, but the consistency does. It's not thick and difficult to stir in dips and other recipes. And you can re-freeze it again for preservation.

@@ChefBuckRecipes Yes, also Dollar General, 99cent only stores have (besides Walmart, Kroger, H-E-B, Brookshires, WinCo., Aldi or whatever grocery stores u have in ur neck of the woods.) Canned corn beef for 2.49-3.50 with knock- off names but still taste the same & have the same ingredients & nutrition labels for the most part. Even Walmart brand is about 3.19 or so...Real island locales like to use fresh foods( except the canned corn beef).., at least that's how we were taught & practiced...

This is a very interesting way to make corned beef - will def try it.. My son and I love it. I have always made mine with Sazon, sofrito, fresh onion, garlic, diced tomatoes, a pinch of sugar, Goya tomato sauce and whatever veggies I have on hand. Carrots & potatoes. Kind of a corned beef stew. Thanks for the recipe idea!

Yes! A good staple to have in the cupboard. My mom sautés onions & peppers then browns the beef. Fold in a big pot of boiled potatoes. Grew up with many siblings so this was a meal where we could have seconds.
it's hard to beat the convenience of canned meats....they get a bad rap, but there is a definite time and place for them in the kitchen (certainly in my kitchen)

What a day this has been, now here u r with a can of corn beef. My youngest daughter asked question of light night snacks. My 1st thought was Dot & Etta's Shrimp Hut Then came to mind Mr. Fofo's Deli owned by Lee Knapp Lee. This place has the most awesome sandwiches with corn beef sandwiches being their top sellers. Out doing the close to daily walk around came up on Lucky 13 sandwich shop, had thoughts of getting the corn beef but kept walking on. Chef Buck thanks for showing up today.
CG and I are finally getting back into our daily walks after about a month off. Too much cookies and sandwiches and crackers and dip are adding up. I enjoy the corned beef sliced and seared and eaten in a plain jane sandwich with just mayo or mustard. Thanks for showing up, too :^)

It's not an ingredient I've used overly much in the past, but we've been eating too much of it in quarantine. It's a staple in my mother-in-law's cabinet...she buys as much corned beef in a can as I buy canned salmon.

sounds like my mother-in-law's pantry, she always has a stack of corned beef, too. The recipe in this video is a dip recipe based on her dip. She doesn't put any heat in her dip, but I think I've converted her over to the horseradish

We have interesting pricing in Melbourne Australia at the supermarkets. So for canned corned beef, the brands ones cost about $8.20 Aust dollars. BUT the supermarkets have their own brand as well and corned beef is only $2.50 Aust dollars, so that's pretty cheap.

Hey Buck, this one slipped by me somehow. The dip looked good. I bought a few cans of corned beef and cheap DAK $4 canned hams befoe the quarantine to go along with my canned fish. I like canned corn beef with onions and potato and tomatoes in a skillet.
yeah...I've really been digging the canned corned beef during lock down...it's a fave of my mother in laws, so I've been cooking it up all kinds of ways--too many ways, actually--I've probably had more red meat so far this year than all of last year, which doesn't sound like a good idea

8 ounces - Dry Egg Noodles, cooked per package directions then add 1 tbs butter
6 ounces - Canned Corned Beef
4 oz = Cheddar Cheese (Medium)
4 oz = Onion, chopped
6 oz = Milk
1 Small Can Cream of Chicken Soup, 10.75 oz
Black Pepper
Blend above items.
Sprinkle lower item.
2.0 oz = Buttered Bread Crumbs
==========
2.5 Qt. Baking Casserole Dish
Bake 350' (30-40 minutes)
(4) Servings
*Notes
Add 50% more cheese if desired
Add 50% more corned beef if desired

And BTW I used Kroger brand corned beef ($3.50) which is identical to Libby's ($4.50)
I think I'll throw in some cayenne next time, I like the pickle and wouldn't want to wipe it out with jalapeno to get a little heat.

I always appreciated the service of the canned food industry and despite the canned food being not the best for health, I do think that it's necessary because of the durability, price and convenience. This outbreak and war shows the need of having canned food. I am doing fine. It's getting difficult due to the low supplies but hopefully things will improve as the virus gets contained or a vaccine is developed

Canned corned beef was made since before WW1. It was supplied to British and Commonwealth forces during WW1 and WW2. The Key was attached as the troopers did not always carry a can opener. So it was easy to open with a key. A britsh WW1 tank was named after the Uruguayan manufacturer Fray Bentos, meat (beef) in a can. The square shaped can with sloped sides is a artefact from the early canning packaging. The Australian and British troops lived on a diet of Bully Beef (tinned corn beef) and Biscuit (wheat type hard ships biscuit) and vitamin C tablets during the siege of Tobruk in the North African Campaign, monotonously for months.They survived on it but really appreachiated decent food when they were relieved.

Btw the block-o-beef slips easily out of the can if you put the (still closed) can for a couple of seconds on a hot plate or keep it for some while under hot water. Enough to warm up the slim side only, else the grease comes out during opening ...
Regarding opening that thing: The recommended method is for sure using the key. I love that method, it is anyhow totally atavistic nowadays. And well, if that doesn't work and you stop half way in, simply use a plier and brute force to pull the strip out ... 😁
But I wouldn't advise to use a standard can opener (means those openers cutting from top). It always creates a little rest of one mm or so standing out in the opening so the meat cannot slip out properly.
The only can opener that works easily is that type which doesn't cut from top but cuts the side of the can. (There are some fancy electric side cutters on Amazon, just in case you want to add an affiliate link ...)

We were in Mexico, but the country wide lockdowns had us hustling back to the US so we wouldn't get stuck and end up running into visa issues abroad. We're currently in Florida, which I guess is where we'll be for a bit. I've used those side opening can openers and I really like them. I always try to put some pertinent affiliate link in the description, but I couldn't find one for actual canned corned beef that wasn't ridiculously priced. Hope you're doing well in India. Looks like you've got some elbow room where you're currently living. I'm glad these events didn't occur when we were living in our dinky Seattle apartment...it's for sure an especially tough time to be in a densely populated area.
@@ChefBuckRecipes Good to hear, Florida sounds good to me, even though I think the whole USA are quite a bit dangerous in the moment, definitely too much of covid19 cases for my taste. And yes, oh man, nobody really wants to run into visa issues. Luckily we've almost new ones, we can extend them online once a year for up to further 4 years from now, so we are doing fine also concerning that matter.
Yes thanks every fine here so far. We are since 21st of March under severe lockdown conditions, means whole India is shut down ... initially it was surely hard but now everybody is in it, and most of the negative issues have been solved or at least discussions settled down and were replaced by understanding. Most people follow the regulations very strictly because we all know falling sick can mean death, especially when people are living far away from hospitals or other medical care. Since a couple of days restrictions are little bit relaxed in the one way but even more tightened in other ways (e.g. we have now absolutely strict lockdown between 7pm and 7am but can move relatively free the remaining time inside a district even though we cannot cross district borders without special permissions), and at least for us it is surely manageable in that way.
We had planned to go for a couple of weeks to Europe starting end of this months, but that's of course not possible, no flights possible, and for sure we are more safe here. In our town meanwhile around 80 active cases or so, among a population of maybe 15.000.000 ... that is really nothing compared to most US or European cities. Since we are both 60+ we do not want to undergo unneccessary risks, so we stay at home and let Europe wait for us ;-)
The garden is for sure helpful during such a time, even though we don't use it too much in the moment. Besides all the plants there are always plenty of insects and birds, squirrels and little reptiles and so on, lot of natural views and sounds. But the current outside temperatures of 35°C/95°F upwards (in the shadow, of course) from 11 am onwards aren't so funny all the time, even though we have no AC it is usually still little bit cooler inside, so even the dogs don't want to stay long outside ;-)
But in general it is much more convenient to live in a house cum garden than in an appartment when you are not supposed to go out, that's sure. Besides the garden we have also a flat roof where we and the doggies can go and hang out, means surely enough space for all of us.
Well, You both stay safe and healthy, and thanks again for the dip-idea, I have to figure that out as soon as I am in Europe. Didn't even eat corned beef for years. it got here anyhow totally out of sight ;-)

Or canned baby shrimp with half mayo and half sour cream, finely chopped onion, and parsley. Mash with a fork. Great for raw veggies. Let it sit for an hour or so in the fridge for the onion flavor to soak in

So I've seen corned beef hash and spam on shelves pretty much as far back as I can remember, but I have never seen canned corned beef until I was looking for corned beef deli slices on the Kroger app and wondered what it looked like... I mean it's possible I've seen it and never paid attention to it, but I feel like this is something I'd have remembered.
It was my understanding the reason the cans have a key to open them is they were used during wars when a can opener was not readily available and the key allowed access to the contents at anytime.
They have that little key so you don't need a can opener if you don't have one. Such as in a go-bag, or camping.
For a softer hash, use mashed taters instead of fried, and add either corn or baked beans with the canned corned beef

What's the difference between the Cylinder Can and the Square looking Can?
At Kroger stores in northern West Virginia...Hornel corned beef 14 oz (round can) costs $3.19......Kroger corned beef 12oz can (square can like you had) costs $4.89
I'd be super happy with $3.19 ...I checked online prices at Amazon and all the canned corned beef I found was $9 and $10 a can for 12oz, just silly
Technical point: When using the provided key remove the paper label first. This helps the operator better observe the winding of the tab thus improving the odds against screwing it up.

They give you the key because you don't have a can opener in the field so you are sure to be able to open it no matter where you are.
yes, if you don't have a can opener, this is definitely one of the best canned items to buy!...when I was a kid, I think I remember sardines having a key as well
Canned corned beef is already cooked, just like bologna. You can eat it right out of the can if you choose. I usually warm it up in the microwave and make sandwiches.
Hi before WW1 they found that sealing the meat in a can along with cooked meat, the whole lot would be cooked by the time you opened it. So cans needed to be made of slightly better metal. Most people did not have can openers like today. So luxury of luxury they put a key on side of can. This also helped the can stay sealed until ready to open and could be sent anywhere in world. They tried at one time selling the keys separately. Fruit was the first t come out in such a can. This preserved the contents better. Any ways I grew up on the stuff. and I am still alive. Try opening a can, break the lump of meat up in a fry pan, warm it up and break up some cheap store bought bread, about three peace's. Stirrer it all up in a fry pan. on low heat. Scoop onto a plate and place in centre of table for you and friends to enjoy. Take care

I thought it would be a higher price in the UK than in the USA...most of the canned corn beef sold in the US is imported from South America

It's probably an economy of scale, Corned Beef is a popular staple in the UK, has been since before World War 1, it was probably the main protein ration for British Commonwealth Troops in both Wars. Hash and Corned Beef Pasties (Potato, Corned Beef and a little onion wrapped in pastry) are both popular here, the pasties are available in loads of places as a take away on the go snack.
