I love roasting asparagus. I love it when the tips get a little crispy. When I roast mine, I often add a little bit of balsamic vinegar, but otherwise I do it like you, just oil, salt and plenty of pepper. I also love asparagus with Hollandaise sauce, but I'm such a fan of Hollandaise, I could eat it by the spoonful. Last automn, I went to Quebec city and had lunch in this lovely little bistro. They served eggs poached on crusty bread with homemade smoked meat, Hollandaise, and a salad of shaved asparagus on top that was to die for!
