Great video Dave! Looked very tasty. I sometimes take a whole potato hiking, I use the aluminium bowl for chips on my mini with @ 10mm depth of vegetable oil. Cut up the spud into chips and fry until golden brown and crispy. It’s a bit easier than using the frying pan.
Tip for you: when you are frying up frozen fries/chips 🍟 it is much easier to use the bowl that comes with the T28. You can easily stir them and turn then over like you would when using a Wok. FRESH cut fries carried in ice water is a favorite of mine for the T28 kit. I carry them in a STANLEY insulated food jar. Love the T28, was sorry to see it discontinued but you can still locate one on Ebay sometimes. They're a great piece of kit. Oh yes, you can also fry up a whole chicken breast using the bowl in the same way and add in stir fry items afterwards 😋.

Skilful use of the simmer ring can also greatly extend burn time without reducing heat too much (on full blast a lot of heat escapes up and around the pot or pan).
Good morning Dave, ooh I noticed you've got the same knife as me, mine was so sharp when I got it, still is tbh and I think it was worth the price. Gotta love squeaky halloumi. Oh if you cut fresh potatoes and coat in a little oil and lemon juice so they don't go brown, they would be good in a seal bag for a few hours, if not to hot outside obviously, dont worry you cant taste the lemon when cooked. Just a little tip. Traditionally the Greeks cook their chips in shallow oil, not like us Brits. Your lunch looked great 👍 enjoy the rest of your weekend 😀

A windscreen is a must for these stoves. It helps the heat a lot.
