Hi, can I know what your oven setting is while baking this? My basque cheesecake always crinkled on top and does not have gooey centre. 😢 My oven setting is heat on top and bottom (conventional).
The wrinkles may be due to the high water content in the recipe. If your oven can be set up or down, it's best to set the top heat to 210-220℃ and the bottom heat to 170-180℃.
The oven has 5 fan settings, and I am baking on fan 2. The image is that the firing temperature is 210℃, which means that the surface is thoroughly baked and the center is moist and gently heated.

Even if you have an oven with 4 fan setting, I think No. 2 fan is probably just right.
