- In Hangzhou, China, there’s a local saying that frying is always better than boiling. So that’s exactly how the world-famous Dragon Well tea gets prepared. Fan Shenghua's family has made this special green tea for over one thousand years, but he fears the next generation will not carry it forward. For now, he’s keeping the unique methodology alive in his Tongwu Village home.

I visited the tea farm this summer and saw how the tea leaves were processed. We even went to a farmer's home where he made tea in person and gave us a sample. Ended up buying a couple of bags of it. The tea was even packed by hand.
I LOVE dragon well tea. They are naturally sweet, and yet has a savory, nutty and buttery mouthfeel to it. Such a shame that he can't find someone to pass his knowledge to.

Long Jing (Lung Ching), often translated as Dragonwell tea, is by far my favourite green tea, as far as I can tell in Europe. It has a quite fruity aroma, compared to the other green teas, but which is all natural. I have a lot of respect for the Chinese people from the Zhejiang province around Hangzhou, keeping their traditions and their highest quality claims alive. They look so calm and far from the western restlessness. Respect & greetings to China from Germany / Europe. Keep your heritage alive. The whole world is your market!

I was in those tea fields last week! The tea is extremely expensive (, up to 30 USD per gram) it's light, nutty & slightly sweet. They drink it in those cups because they eat the tea leaves after. Also the pan they use to fry can get up to 400°C I don't fully grasp how some of them don't use gloves!
Have they tried filming the techniques? That way it will be saved digitally for the future.
They can, but perhaps they feel it takes away from the authenticity would it not?
As with any trade, it's better to learn one on one with someone who has experience.
They have, the techniques of making Dragon Well tea as well as techniques in other types of tea cooking, are all part of the National Intangible Cultural Heritage in China. as of now there are 518 national level Intangible Cultural Heritage listed.
And within that list it has names of people and families that are "Inheritors of the Intangible Heritage". They get special funding if their craft is under threat.
Chinese traditional culture is in good hands.

It’s really unfortunate that there’s no young people willing to learn his craft. I feel like nowadays everyone’s so fixed on the idea that that you need to go to college in order to be successful.
Back then, it was a fact that you had to go to college in order to become successful. However today's requirements for success have drastically changed while our education has not.

I visited the Hangzhou farm 4 years ago and got to try real Longjing Tea and it was really good. I highly reccomend it to people who love tea. (BTW for those who want to know how to differentiate high grade and low grade tea leaves, you can see from the container. Real longjing is packed in a dark green cylinder like bottle. I know this because when I bought it at the farm the owner packed it right in front of me from the baskets that they dry them)
The price might be a bit expensive based on the grade of the tea leaves. I got mine at 3000 RMB for 500g
I really hope that they’re able to pass it down to the next generation. Also I hope to try their green tea someday.

This tea is called longjing (dragon well) tea. It is a type of green tea produced from Hangzhou which is one of the more beautiful places in China.
Pure tea is so beneficial to you! It is skills like these that are being lost because people only care about technological advancement. Take the time to smell the roses, errr..I mean tea!

This feels more so of a fun fact video. Although it was sad to know in the end when he said he tried to get students to learn how to pan tea leaves right but parents want to go to college. Imagine if that was your way of living in the your family and then later on someone drops that bomb on you

The secret to dragon well tea is 1) the dragon well water on the top of the hangzhou hill 2) using only the young shoots 3) using a purple sand teapot (rare heat retaining pot)

Sorry but your 3rd point is wrong. There's no need to use a zisha(purple sand) teapot for green teas. The heat retention properties of the teapot might even make it more bitter. Use borosilicate glass like the guy in the video. He knows his stuff. Zisha is used for darker teas like Black, some Oolongs and some Puer.
