This is my husband’s favorite cookie and I have never been able to find something close to what she made. She used to send him these cookies in a holiday tin at Christmas time when we were in the military and stationed away from home. He LOVED her pineapple cookies. Can’t wait to try this recipe. So excited to surprise my hubby this Christmas.

Well my answer may be pretty boring - but my favorite Christmas cookie that I make is the cut-out cookie recipe. However, I have a special secret that I put into the icing or frosting that makes the cookie pop with yummy! I also love putting the Christmas images on rice paper on some of the cookies as people just love those. I also make the deep dark chocolate cookies with green peppermint icing sandwiched between. Of course, gingerbread men with extra spices in the cookie batter (I also make them large and soft and thick). Those are my 3 staples. I do others as well to give a variety. It takes me about a week to do all of them. I am a glutton for punishment. LOL

I hadn't even thought of that. I am curious to hear how it turns out. If you look you might be able to find pineapple kool-aid, that would up the flavour and not have any of the 'jello' characteristics. Please let me know how your experiment turned out.

I do think the flavor would be stronger if the pineapple wasn't drained but I worry about it being too liquid. Perhaps I need to try this recipe without draining to see the difference. I think possibly a better solution would be to add more pineapple chunks.

My grandma always told me instead of adding the salt and the baking soda and baking powder you can just use self-rising anything that makes our life easier a recipe may be so old that they might not have had surprising flour but I'm not sure I'm about to Google it LOL
Sounds delicious, but I couldn't eat just one! Having a whole batch sitting around would be way too tempting for someone who is pre-diabetic, so they would need to be given away. I love pineapple as well as pineapple and coconut though and always treasure hand written family recipes.

Yes, it was lite brown sugar, I think this recipe would work find with dark brown sugar as well.

You can't go wrong with butter. I also think butter will add additional sweetness, cutting back on the sugar is a good idea.
