There is food and there is food made with love. For me, King of All foods able to communicate love and celebration is a carefully made highly decorated, well glazed pie. It is the centre piece of any table spread, the eye is naturally drawn to it. And when you see a well made pie such as this you immediately know someone has put great effort and care into making it.
I know a chef who works in his restaurant. He’s they all enjoy the role and Calum is super lovely to work for however they are all very tired everyday because even in a good environment being a chef is difficult and stressful.
a month ago i and my wife took the chance to be guests at the holbourne dining room and try out a variety of pies. We absolutely loved it to enjoy those delicious treasures. We well be back at our next visit to london.

Markets and quality butchers closed today because Romanians love putting their public holidays on a workday irrespective of the date. 😂 So with minimal choices I went for a slab of pork shoulder. Thinking I’d marinate it I suddenly remembered I’d wanted to make a pie the other day. Searching “pork pie” I came across the traditional ‘cold’ pork pie 🤢. Sorry, but no. New search “hot pork pie” brought me to Calum Franklin’s “hot pork pie”. Immediately hooked, I ended up here - the first video of a night-long binge. 😂🎉🎉 🥧
Usually in the restaurant the pies are made during MEP also known as prepping time then when the customers order the pie they get the check and chefs put the pie in the oven as soon as possible and it's often written on the menu saying "allow at least 30 minutes for the pie" and most pies are served hot unless it's a certain pie.
Beautiful shop, talented chef, and that "British food is awful" is really big cliche. They had a great kitchen yet it was forgotten because the industrial revolution hit hard to England. But, there is a big but; this doesn't change the fact that London is become an unsafe s..thole and The UK is decaying very fast. The same for France, Germany, Sweden etc.
Countries with easy access to good quality basic ingredients (meat, fish, dairy, veg) have rarely based whole cuisines around spices. Spice as a currency or status symbol is something else.
i have been to his restaurants soo many times most pies are portioned nicely, the pie shown in the video is for show. and pies that big are usually made at home for like sunday dinner so that family can share sliced into pieces and it's not a burger so you cannot eat within a bite whatsoever it requires using a knife.

Yeah but you can't eat that thing.... You can't pick that up and bite it. Looks good, probably tastes great. But it's too big, needs to be refined.
