Best instructional pie video I’ve ever seen. Thanks for being so _calum_ and patient. 😂
As someone already pointed out, when rolling the base, you’re actually turning it 90° not 45°. But seriously, it was so well explained and I was so engaged, I didn’t even notice. That’s the sign of a grand master teacher. Officially hooked. 😊

Unbelievably beautiful! Just watched the CBS Saturday morning show with your episode. As a granddaughter of an English woman, this brought joy! Very informative as well with the flaking and rolling and egg wash. It was all incredible. Thank you! New follower and I will be telling my relatives and friends. Thank you

I learned of you from Alan Knott's article Chef of Chef Works. I'll be adding this book to my collection.

This one of the best pie making videos I have seen, and I have watched a LOT!, learnt some new pastry tricks!, however confused because there are NO links anywhere that tell you where to buy the pie kits?

I bought his book and he has a recipe for this side dish. It's called "Clapshot":
      600g of swede (aka rutabaga)
450g of King Edward potatoes, or use maris piper potatoes instead
      Dice them both to 2cm
      Boil them separately:
      Swede for approx 25 minutes
      Potatoes for approx 15 minutes
      Drain
      Add:
      4 tablespoons of hot milk
      80g of butter, softened
      1/2 teaspoon salt
      1/2 teaspoon pepper
Two sprigs of thyme, leaves picked (not sure if this means leaves only?)

That's turning the dough by 90 degrees, not 45 degrees

😂 you’re right. Didn’t even notice. Made perfect sense to me. 😂🤦🏻‍♂️ Everything else was so well explained, though.
