But seriously, it was so well explained and I was so engaged, I didn’t even notice. That’s the sign of a grand master teacher. Officially hooked. 😊

I bought his book and he has a recipe for this side dish. It's called "Clapshot": 600g of swede (aka rutabaga) 450g of King Edward potatoes, or use maris piper potatoes instead Dice them both to 2cm Boil them separately: Swede for approx 25 minutes Potatoes for approx 15 minutes Drain Add: 4 tablespoons of hot milk 80g of butter, softened 1/2 teaspoon salt 1/2 teaspoon pepper Two sprigs of thyme, leaves picked (not sure if this means leaves only?)
