I don’t ever leave negative comments when it’s just my opinion because everyone sees things differently but I had to leave this comment about my experience baking this cake. It didn’t go well. I baked it twice to make sure it wasn’t a fluke. The baking time and temperature don’t seem to work out. I’m baking in a 2lb loaf tin and the top of the cake gets very brown long before the middle is anywhere close to cooked. The second time of baking I used an oven thermometer to make sure it wasn’t my oven at the wrong temperature. Also the candied lemon peel looks great but the sugar syrup doesn’t taste of lemon. Possibly because the peel has been blanched three times and much of the flavour could have gone. It’s yellow and sweet but not lemony, sadly. It’s great that other people are having good results but since ingredients aren’t cheap and I want to make a cake for my mum’s birthday I wanted to leave my feedback in case anyone else found the same thing.
Mine ended up being really greasy and dry. I overbaked it and I don't think my oven was at the right temperature. When I added milk the butter clumped up a bit is that okay?
Get some scales, they’re a valuable tool if you’re going to bake regularly. Cups are not accurate enough. And also, when measuring in liquid, ml and grams are the same. So 250ml of water would be the same as 250 grams of water ect
I've just made the cake and yet to taste but when she uses the milk I may substitute some for the lemon juice as I have always done in my lemon drizzle but I shall see when I taste it!!

Hi Georgia, love this loaf. if I wanted to make this as a layer cake, would doubling the recipe be sufficient or would more be required?
It's a slightly softer sponge so just bear that in mind when stacking. But in theory, yes it will work!

Would you have any recipes where you either don't use, or replace, eggs? My OH is allergic to them but he used to totally love coffee and walnut cake.
As far as I'm aware you can use aquafaba and there is a guide online to tell you how much aquafaba = how much egg

You don’t include lemon juice in the cake recipe, just lemon zest?
