The scotch bonnet peppers I’m the states aren’t very spicy. If we’re talking about In the islands use 1 and remove the seeds. The vinegar balances and helps preserve the green seasoning, therefore it does not change the taste.

This looks GOOD! My family is from New Orleans. This is very similar to the holy trinity blend we use in Creole/Cajun cooking. Our version uses fresh celery, onion and bell pepper. With garlic and green onions added in. We use it to cook just about everything. 😂 I will try out your version as well to use in my Jamaican and Caribbean style dishes. I normally freeze all my fresh seasoning in ziplock bags. But it’s good to know adding salt and vinegar will preserve it in the fridge. Thank you for sharing. 💗

Yes! With the seeds is fine. It’s just gives it an extra kick but it won’t over power the other ingredients.

Hi. I don’t recommend using Coconut oil in the green seasoning because coconut oil hardens when cold. I would recommend olive oil or vegetable oil.

Why do you put the iris potatoes in the curry chicken so late? Especially when you are using the white parts of the chicken , that cooks so easily.
