Going to be a cool project! I am doing a smaller version with a pontoon boat soon.
You should do a converted school bus next. I'm about to start my solar project, but I'm using Victron gear. I'd love to see how you'd approach a bus build. Personally I need 120V and 240 so I'm dong a 48V split phase system. But anyway, I'd love to see a future episode with you doing a sweet bus conversion.

Looks like quit the project. You should get a copy of the ABYC standards. Electric on the water is different than electric on land. Also, Regen can be tricky without variable pitch wheels. Are they not going to keep at least one genset? Wind can stop blowing and without a lot of solar, keeping that ship up and running will take a lot of juice. Best of luck with it.
If i am correct the goal is always sail silent ( no generator ) , and this means elektrical power and wind .
Maybe this is one option to generate electricity ;
