Pasta is my weakness and this dish looks amazing!! I’ve never made this particular dish before. I’ve got to look for that meat. Otherwise I’ll use pancetta. This dish just proves that you don’t need a lot of ingredients to make an amazing eat. The Chianti was definitely the perfect pairing!

However, also like you pointed out, the cured meat had a lot of salt. So amazing to see you make a dish that looks so delicious with only 4 ingredients. I forgot that you are gluten-free for this Pasta recipe I would skip then. The only reason is you need tremendous amounts of starchy water to bring the sauce together and make it creamy. Gluten free pasta does not give you starchy water just a heads up. Thank you for watching
Hi Jeff. I just got in from getting a perm I am not sure if getting one was a good idea :/ great tip about not adding the salt to pasta water if using the pasta water for helping with a sauce. I love lots of pepper in dish like this it really makes a difference. Thanks for the tip if we can’t find that we can use pancetta. That looks so so delicious Jeff . Thank you Steve that is a great question. My inspiration definitely came from my Mother Who did farm to table cooking even before it was popular. I remember as a young kid helping my Mother in the kitchen creating new recipes

Great Job on this! I like that you used guanciale instead on pancetta. I love pork jowl....been known to binge a midnight BLT sammich with smoked jowl but don't tell no one. Good tip on not salting the water since it will destroy the sauce w salt. Nice frickin pepper grinder LOL... Gotta get me one of those. Looks like it came out fantastic. Very nicely done!
A simple pasta recipe, very effective. Since I don't eat pork is there a substitute I could use, maybe a type of beef I may be able to use to get a similar result?
I’ve been doing this kind of past but I use bacon amd cook the same way, and also I don’t put any cheese to taste it cream Jeff, but I’m surprised that I usually throw the starchy water from pasta boil and also the excess oil from the bacon I fry. Watching what u did, combining the starch water and oil didn’t look oily at all. Ok, I will try next time, not throwing them both completely, another til learned here! Thanks sir!
Thank you pinky that’s how this creamy sauce comes about the emulsification between the fat rendered from the pork and the starchy pasta water. I gave a warning please make sure the hot oil has reduced in temperature before you add the starchy water or you will have a major bubble over top of the pan

If you cannot find the pork cheek you can definitely use pancetta it just won’t render as much fat

Unfortunately you would definitely have to skip this dish because you need all the rendered fat from the pork to make the sauce into it emulsify it
