Love the garlic and all the colours of the veggies. Looking very yummy. I didn’t know they were the same grape. Wow I do love the presentation!! Fresh basil so so good. I like it with French bread also

Ratatouille is good but yours is several steps up from that. The ingredients you have used are so fresh and colourful. We are eating healthy here so this dish will be made in our house this week. Love how you mash the flavours together, this must make it taste so good...

Thank you this is definitely one of my favorite summertime treats that I get to enjoy all the vegetables from the garden. And yes you only wanna mash half of the tomatoes and half of the roasted eggplant together to create this delicious sauce the other veggies you want to keep whole

I absolutely love ratatouille! It also reminds me of a vegetable lasagna I once had in a restaurant called Botega in Napa. SO good!

I love the movie 🐀 and now I love this dish. Thank you for your tip it’s completely right all these fresh veggies contain so much water and baking them in the oven to extract the liquid is crucial. I met Frank Coppola and he is a very humble man and that’s when I starting drinking his wines but I never tried this one and you said notes of raspberries and plum I’m so getting this wine soon. Thank you so much for this amazing pretty much vegan vegetarian dish. You are an amazing Chef Jeff and don’t worry you can pick up that wine glass again. 😊 cheers 🥂

Who needs meat when you can have this gorgeous Ratatoulle. You made it with such attention to detail and love how you cooked things at separately, and not just put everything in a pot. It came out so great Jeff. Love Francis Ford Coppola wines too.

Vegetarian food is my favourite so this is right up my street! I love the beautiful vibrant colours perfect for a light dinner in these summer months. Cool tip with parchment paper for the zucchini and eggplant. Looks delicious Jeff. You could definitely make this a pasta dish too.

Of all vegetables, eggplant is really one of the challenging vegetables to prepare coz many dislike it. I’m grateful that I found one channel who fried it so crunchy which I think u knew it jeff, but I always do it, it became like a snack to me lols. Anyways, I didn’t expect that u can do this eggplant here, it seems that, it’s the star of the recipe! Hahaha! By the way, the mashed eggplant is what we usually do in the Philippines. So I’m not surprised about it. This is really perfect if you’re dieting !

Wow, that vegan French ratatouille looks amazing! You are right: you need to roast the vegetables in the oven first so that it isn't mushy. Roasting also brings out the flavors.
Crushed garlic is so flavorful!
Glad to see that you added the heirloom tomatoes on the top. Like you said, they blistered nicely, so I am sure they were flavorful.
So colorful and flavorful. Yes, it takes a lot for you to put down your wine, so I know that was good. The drizzle of olive oil at the end was the perfect finishing touch.

Hi Jeff! Making veggie stock today and catching up on your videos. I love ratatouille! This looks lovely. I like the idea of roasting the vegetables in the oven. That is what I did with my vegetable stock before adding to water on the stovetop. I love roasted vegetables!

LOL YES. Do you know Disney World in Florida is opening a Ratatouille Ride in their France pavilion of Epcot this October 1st? It looks good! You're shrunk down to the size of the mice and you go through the "kitchen" just like in the cartoon.

Jeff your ratatouille looks so good! I’m glad you gave us the tip about trying to extract some of the water by baking it so it’s not so mushy and watered down. I have actually never made this dish but now you have me excited to give it a try. How big is your garden? I saw you picking a few of the things in the beginning from it.
