[SPOILERS IN ALL MY FOLLOWING COMMENTS]Angels and normal life come from different eggs, normal life is created by the fruit of knowledge and angels are created by the fruit of life. Normally, these 2 eggs aren't supposed to land in the same planet, however, in Evangelion they do. So angels are natural enemies of normal life. If somehow fruit of life and knowledge are combined, they will have the same power as ancestral race, who created the eggs in the first place. Gendo and Fuyutsuki are seemingly trying to kill the angels to save the humanity, but in fact they are just trying to combine the power of them in order to make the instrumentality come true in order to be able to live with Yui again. In the other hand, angels are specifically attacking NERV because if an angel comes into contact with Adam, which is in an embryonic form after the second impact, they will create the third impact and will be the only ones to live in the planet. Also, each egg comes with a longinus spear, but one of them loses the spear after landing on Earth. Seele just likes the idea of instrumentality while Gendo and Fuyutsuki do this for Yui, and Yui is in unit01.
Each eva unit carries someone's soul, unit00 probably doesn't need a soul since it is already piloted by an angel, unit01 carries the soul of Yui, Shinji's mom, unit02 carries the Asuka's mom, this is how they can go berserk mod sometimes. Also, all evas are the extension of Adam, except unit01, which is an extension of Lilith
Sorry, the ancestral race didn't create the eggs, they created the seed of life and seed of knowledge. Seed of life is Adam, who creates angels and the owner of white egg. Seed of knowledge is Lilith, who creates LCL and therefore the normal life, and the owner of black egg. Remember, if these two are combined, they will have enough power to destroy the normal life or make instrumentality come true. After Adam turns into an embryonic form because of the second impact (Second impact is caused by Adam after a human comes into contact with Adam, and yes it was planned), his soul turns into kaworu, just like Rei is the soul of Lilith.
