Recipe for lasagna sheets.
600 g. AP flour
400 g. Starter or discard
10 g. Salt
10 g. Lard
10 g. Olive oil
5 eggs
Put all ingredients in food processor and mix until combined then take it out and kneading with hand until the dough smooth, if the dough sticky adds more flour, the dough shouldn’t be too soft, rest the dough in the fridge for 30 minutes and cut in small portions then use a lot of flour to make sure the dough is not sticky. Rolling out flat and using pasta machine to make sure the pasta is consistency smooth and thin. Cut the lasagna sheets to fit your pan and let them dry a little bit before using, it will be easier to remove. I am making Lasagna with fresh lasagna sheets, omg, it’s so delicious.
