Fricase de Pollo or Chicken Fricassee Boricua Style

  • Hi and welcome back! Today I made for you my version of Chicken Fricassee or Fricase de Pollo.
    3 1/2 lb chicken(your favorite pieces)
    1/2 cup diced onion
    1/2 cup diced green bell pepper
    2 1/2 tablespoons sofrito
    1/2 teaspoon dried oregano
    Adobo to taste
    Few sprigs fresh cilantro
    1 cup of white wine(or 1 cup of white grape juice + 1 tablespoon white vinegar)
    4 garlic cloves, minced
    1/2 cup of diced cooking ham

    This is so good, ( I remember Granny frying the Tocino and taking it out to give us pieces of the crunchy tocino and her El Pavo or Canario wine) Memories.

    I don't care what anyone says! This was delicious. No pees for me and I used beer like my grandma used to make it. I followed the recipe and it was great. My friends want me to make it all the time now.! Lol. Thank you for sharing.

    I'm making this asap. I've only ever had French Chicken Fricasse. Which is amazing. You should try it. U use chicken breasts, thighs, drum sticks on the bone. The chicken falls right off from being so tender after cooking it. My husband and brother in law are both Puerto Rican so they will be surprised when I make this version. TY.😀 can't wait to try it!!

    Is there a reason why you prefer canola oil over olive?

      +Adri Molina I like it because it's a neutral flavor, I prefer olive oil when I make certain dishes only.

      This is low in fat. It only has 1 1/2 tablespoons of canola oil.

      Evelin Juarez evelyn im 57 yrs old i grew up on this food you want low fat PR food then eat half of whats served theres no such thing cause if you substitute things then you statt changing the flavor enjoy.

    Fricase de Pollo is very similar to this one, but it's best when cooked with beer. Depending on the portion. I don't like beer, but it taste good in the Fricase de Pollo. And you don't need all those olives & definitely NOT the green pees.

      This is how pollo en fricase is made. You're describing pollo guisado, which doesn't have these ingredients. I have a pollo guisado video.
