In this video I used 22in 21g square (deadsoft) and 30in 20g halfround (half hard) sterling silver wire.

I'm fairly new and have 20 square. Would there be any noteworthy difference from 21 g?

Definitely not enough of a difference to buy 21 if you already have 20! I switched from 22 to 21 years ago and have just always stuck with it. I’d use what you have! When it comes time to resupply you can always experiment with other sizes if you want to then
