Yall are trippin that this aint a quick and easy recipe, even doing it fully from scratch, its toasting some spices, then sautéing things together, once the curry is done the rice is super quick too. Its like a 30 min cook time

also, japanese mayo doesn't contain any water, whereas most american brands of mayo have water as their second or third ingredient which is why the mayo isn't as flavourful.
JP mayo overprocessed too, but in the US it's even worse. If your dish relies on mayo and you want it to level it up, take a minute to make your own
