Fresh ground spices are always the best. They beat store bought hands down every time. If anyone is interested in making their own turmeric, it's really simple. Start by going to your local grocery store or Asian store and buy the roots (or alternatively for the very freshest roots, grow your own) .The flavour and colour make it all the more worthwhile. Here's what I do to make it: 1. Thoroughly wash turmeric root. Use a stiff scrub brush to remove most of the outer skin. (It's not necessary to peel the turmeric; just remove any really dry or rough patches.) 2. Thinly slice turmeric. Use a food processor equipped with a slicing blade, a mandoline, a potato peeler, or simply a knife. Just aim for a uniform thickness, 1/8" thick or less. 3. Place turmeric root slices on dehydrator trays, or on cookie sheets. 4. Dry in a dehydrator or in a slow oven at 120 - 135 for 5-7 hours, or until the turmeric root is crispy and completely dried. It should crack rather than bend if it's done. Allow to cool. 5. Place dried turmeric in an herb grinder, coffee grinder, or blender and process until it becomes a fine powder. 6. Store in an airtight container. Try it out! I'm sure you'll be glad you did.

Yeung Man, I made this recipe today and it turned out amazing. I loved it, although I overcooked the tofu a little bit more than desired, but the sauce was amazing. I added some diced green onions on top for color contrast. Great recipe, thank you. I need to get the new book. Blessings!
Made this for Sunday dinner. Added seasonings to my tofu before baking (granulated garlic and onion, smoked paprika, salt, cracked black pepper). The sauce is the thing here. Utterly delicious. I didn’t strain my juice and used only 1/4 tsp sesame oil, used a little chili paste instead of cayenne pepper, and cornstarch in my slurry. I plan to keep this sauce on hand to use as a salad dressing, etc. It’s really good.
My cookbooks finally arrived! I ordered the Cook with Confidence and Yeung Man Cooking. I own a ton of cookbooks. These are by far the best I have. The photography is outstanding. Almost makes me want to take the book apart and frame some of them! The recipes are well written and the layout of the book is easy to follow. They are not only worth the money, but an essential tool to the home chef that wants to up their home game. I am so glad I stumbled upon your channel. I have never liked tofu until your Bulgogi recipe. I made a similar 'ground beef' with vegan mac and cheese that was inspired by that recipe. My family devoured it! We are not vegan, but eating less meat is better for everyone, especially the environment. You make it easy, unintimidating, and delicious!

I made this & it was divine!!!!! I crisped my tofu on the hot skillet though because it just wasn’t doing right for me in the oven. The flavors were wonderful! I used store bought Oj, cornstarch instead of potato starch, and olive oil instead of avocado oil - just what I had on hand & it was still perfect!!!!! Thanks Young Man Cooking!

I have made this tofu place it on Soba or black Lotus noodles that r mixed with fresh spinach. Using cayenne is great . I use a Thai pepper . They r hard for me to find locally. Adding turmeric is wonderful touch. Thank u so much. On this list for this week .

Beware about using too much zest if you're cooking this - I used way too much and as a result something about the taste was off (slightly metallic). I guess «some orange zest» actually means the zest of 1/2 orange max. Thank you Wil for the video and the recipe, looking forward to cooking more of them!
Fantastic!!! I hate frying the tofu bc it splashes all over the oven. So putting it in the oven is very appealing to me and the orange juice and all the other spices make it so good and appetizing. Thank you.
I just got done grinding my own fresh turmeric, and this should be a perfect showcase for it. I'm also about ready to divide my ginger rhyzomes, so even more super fresh ingredients for this wonderful looking dish! I wonder how it would be with a garnish of some fresh green onions or home grown garlic chives?
I’ve only tried tofu a few times and each time my family and I hated it. This recipe was lovely, the sauce was perfect and the texture on the tofu was too. I served it with Kenji’s scallion oil noodles and some rice.
I like the way you prepared the sauce separately. The other recipe I saw had us toss the tofu in the sauce before baking, not quite ensuring a nice, crisp consistency. Yours is so much better.
I didn’t know what to cook with my 8 oz of fresh orange juice, and this recipe came up! Excellent, I even found non GMO tofu locally! It was so easy and quick to make! I think my tofu (hard & dry) was over cooked but can’t wait to try it again. The sauce is incredible!

Hi! I’m evidently not Wil but I can answer your question! A roux refers to flour of some kind combined with equal parts fat. A slurry is flour/starch dissolved into a liquid (water or broth). :)
