I want to cook the eggs to never have to worry about any discomfort or salmonella problems... but I also want to use the egg whites. For that I would usually cook the egg yolks slowly on a double boiler and then mix them in with the mascarpone. Can I just cook the yolk and the whites together that way? Or what should I do?
When I was a ragazzo my mother would mix the cake and then give me and my sister an egg beater each to lick the chocolate. Of course we put them in the sink afterwards😄
You say use half the sugar but what do you use the other half of sugar for? do you mean just add half the sugar at the beginning and then add the rest part way through?

"Bagno maria" - basically "cook" them on steam. You definitely shouldn't cook the yolk separately in my opinion

The coconut sugar turned it a caramel color and it was absolutely delicious 👍 huge hit.
Um... I wisked 8 egg whites with 100g for almost an hour and still didn't get it to stick. 🙄
Arc Eskeleto Whaaaat??? Have a look at the recipe and if you follow the ingredients amount I suggest it will definitely work for you!
Maybe your mixing bowl or whisks has water or grease on it. Its make egg white doesn't come up... should be clean... and dry.
