Dr. Peter Ballerstedt - 'When is 'Protein' NOT Protein?'

  • Peter Ballerstedt (aka The Sodfather) received his Bachelor of Science in Agriculture in 1981 and Master of Science in 1983, both from the University of Georgia. He received his Ph.D. from the University of Kentucky in 1986, specialising in forage management and utilisation, minoring in ruminant nutrition. He was the forage extension specialist at Oregon State University from 1986 to 1992.
    He currently works for Barenbrug USA, a grass seed company. His study of human nutrition is fueled by his personal experience. He is an advocate for ruminant animal agriculture and its products, speaking to audiences in several countries about the role of ruminants in humanity’s past, present and future. He strives to build bridges between his agricultural tribe and his low-carb/keto/carnivore tribes. Peter blogs and posts to facebook at “Grass Based Health” and on Twitter and Instagram at @GrassBased. Peter and Nancy live in western Oregon with their two dogs Conor and Noni.

    I learnt not to tell people what to eat. I only tell them what happened to me after being diagnosed with type 2 diabetes. I think people here know the story.

      The sicker you are, the more treatment you get and you get prioritized too. We have backwards incentives. But even with cost sharing, the unhealthy still suffer the physical consequences of their bad decisions.

      yup. when they ask me what did i do? then I tell them the "secret" :) I learned not to be "preachy" . I learn for my own benefit and my family. Those who seek will find. I am grateful for these kinds of videos and all these folks teaching us the truth! We have been deceived by corporations and self-serving institutions!

    I appreciate Dr. Ballerstedt's stance that his objective is simply 'to make information available' to help people on their journeys so they can make more informed decisions. I thought I was making an informed decision 20 years ago when I went 'low-fat' hoping to avoid my father's heart disease. Turns out, that was not a well-informed decision. I did not then know what a carb was, what insulin resistance was, what drives heart disease. Now, thanks to freedom of info on youtube, I do. Now, I sharply limit carbs. Thx for sharing, Doc.

    Indians used to use ghee to cook with but they've been sucked into the western world diet and are now (much of the time) using seed oils without realizing the damage they're doing to themselves as they're vegetarians.

      seed oils are inflammatory! bingo! seed oils are not a natural part of a human/ hominid diet. many health experts and doctors ( dr caldwell essetyn, explain the damage seed oils cause to the endothelium and arteries)

      High protein may not be good. High fat moderate protein allows the body to use old proteins through autophagy. If you are loaded with protein then this will be suppressed and MTOR is also a issue.

    We, as a species on this planet, are busy with our lives basically since we were able to walk. We depended on government, agriculture, medicine, etc., to give us trusted information we needed to live a safe and healthy lifestyle. Now we are seeing on a large scale it was far from the truth. Much research is necessary and vital on a personal level to navigate through all of the misinformation we were given and uncover what is actually good for us and our families.     Great talk, thank you! With the demonizing of fat (thank you food pyramid) and now people waking up to the downside of sugary refined carbs... people seem to be left with the conclusion that adding "protein" to the packaging of all existing processed foods (including water) is the bullet proof solution to fix our health crisis. I really appreciate you explaining how dietary protein really works and what is really happening.

    What an incredible presentation. Both the content and delivery.
    Further information to show that plant based diets aren't as environmentally friendly on a quality protein basis. To say nothing about nutritionally inferior.

    WAOW!!!…this conversation has been long overdue in my personal life. I’ve been lost in a sea nutritional confusion over the years😖. Born in a third world country, I’m that first baby that suffered with kwashiorkor when the second baby was born😣. I remember those days when my gut was bloated so badly I cried loudly and irritatingly every single day. When food became available, it was some form of carbohydrate dense food or cow’s milk, and I had a gut intolerance to all of it; esp the cows milk (likely processed). My choices as a toddler was starvation, or pain for many hours and days after eating those foods. Listening to this talk gives me tremendous clarity as to why my body never developed well when I entered puberty; along with several other dysfunctions and ills I’ve carried all my life. The carnivore lifestyle has been the nearest life-saver for me for sure; and this talk has given me so much more insight…the fact that I have been chronically protein deficient nearly all my life. I’m 53 and a little late in the game, but feel much more confident that I may actually have some kind of control as to how things go for me for the remainder of my maturing years🙏🏽🙂

      There is no way for eight billion humans to eat as many livestock as we are raising and for it to be anything other than DEgenerative. And yes, David, humans are perfectly well suited to eat organic whole grains. People who eat more whole intact grains are slimmer, have less diabetes, and have better heart health, brain health, and longevity. But eating too much fat then eating processed carbs on top of that is a disaster.

      Actually, it was quite a misleading talk delivered by someone whose paycheck depends on meat consumption and who is obviously promoting more meat consumption while not telling his audience the whole story. Most Americans eat too much protein and far too much animal protein, and eating more plant protein instead is healthier.

    Well, I learned something today.
    I felt mildly guilty at not eating a lot of vegetables on my very low carb diet, and that I was eating more high protein than high fat.
    Good to know I shouldn't feel guilty at all and continue on my cheesy beef and eggy bacon bonanza.

      Except the whole video is totally misleading, designed to sell meat. The reality is that most people in developed nations are eating more protein than they need, and far more animal protein than is healthy.

    Is there a danger from too much animal based protein? Has anyone ever tried to overeat on a large quantity of meat? It's extremely difficult. Once you're stuffed, you're stuffed, and chances are you won't be hungry for a very long time afterwards.

      Yeah you always hear arguments from the veg community saying they don’t like eating meat because it makes them feel so heavy or whatever. Yeah sunshine that’s your appetite saying cool thanks we’re full…
      But on the other hand there’s a book called “eat like the animals” where they figured that all animals from locusts to 🐀 to baboons always stuck to a specific range of protein and never exceeded that in spite of maybe exceeding total calories (depending on protein density of food). But they reckon that it might be dangerous to exceed that amount of protein because it maybe makes you age faster or something. But the point is that your natural pre programmed appetite stops you from eating more. So like unless you’re in a hot dog eating contest or are chugging protein shakes or something; you’re kinda not capable of overeating 🍳 🥩 🐟 🥛

      I'm carnivore for almost 2 years and eat about 1.5kg meat/day. Haven't had a real problem, only thrived in every metric I can think of. You just get full and find the meat bland when you hit satiety.

      One assumes the problem would mainly be all of the added protein (soy, almond flour, etc) and amino acids. As you suggest, it's next to impossible to eat massive amounts of meat at any one time. I know that is true for me.

    I am coming back to this after listening to 15 min of Joe Rogan interviewing the authors of Sacred Cow. At about that mark, Joe asks one of the authors how the protein of beef vs broccoli differ. She is unable to answer. I wish this talk by Dr. Ballerstedt got as much publicity as that book. Or even if the authors were about to use him as a source.

    Ok,,,,, then dry dog and cat food is crap. They always calculate Crude protein first with some hi number even though the food smells like cardboard. If you want to see your pet go down feed dry food only.

    it makes sense to me that a lysine deficiency would cause fat accumulation as i would think the body, not wanting to be wasteful, would then convert the excess protein to glucose which could end up convert to and stored as fat.

    6:40 just to touch on this. Protein is the ONLY macro nutrient, to result in a comorbidity when consumed in too low a quantity. The effects of consuming too little carbs or fats are easier to reverse and do not contribute to worsening outcomes of other diseases. Yet recommended diets prioritize high amounts of carbs and fats that, as an inverse of protein, are more dangerous when consumed in high quantities.

      The diets that have achieved the best overall long-term health outcomes are diets in which the majority to vast majority of calories come from whole food carbs, and they get fewer calories than Americans do from fat and animal foods. Disease rates ramp up with higher animal fat and protein consumption.

    Real food: animal protein, animal fat.
    Subsistence food: starches, sugars, plant protein.
    Our modern diet of processed food and drink full of sugar and junk starches constantly mimics a subsistence state where fat is conserved no matter how much we eat. We beome fat and insulin resistant and malnourished all at the same time.

      @@lidorcohen3113 Because there might be a bias against , not only from nutritional standpoint but political, religious etc already in place that does not allow for it? If you listened to a couple of interviews with Calley Means the food industry, mainly processed food spend about two or three times as much on lobbying compared to the petroleum industry. And they also kind of watch their interest by kind of campaigns that are not obvious as who is behind the message. Like for instance the idea of doing away with soda being allowed food at foodstamps got one of the soda companies encouraging "debate" on such a measure in practice would be racist.

      Television exists to sell you stuff. That is its entire purpose. It exists for the benefit of mega-corporations, so that they can tell the consumer what to buy. It does not exist for "entertainment." The entertainment aspect is only what gets you to turn the thing on. It's like the glittery lure on a fishing line. But the actual meaning of the line is the hook.
      Now, bearing that in mind, why on Earth would the mega-corporations want to let someone whose message counteracts their own take up any sliver of time on the machine that belongs to them, that exists to serve them?

    My bad cholesterol levels were horrendously high and my good cholesterol levels were extremely low arteries were partially clogged and my organs were barely ok. This is what convinced me to do intermittent fasting one meal a day keto meat and fat with 20 grams of carbs in real low impact carbs. I drink a cup of coffee with butter coconut oil and butter as well as 3 tablespoons of heavy whipping cream and I drink 6 tablespoons of heavy whipping cream for my brunch and dinner I try to get 80-100 grams of protein and 20 grams of leafy greens. I’ve lost 18 pounds in in 20 days and my Np told me that she wanted to start me on statins and I told her no thank you but rather schedule me another blood panel in 6 months and then I Will determine if I need a statin if my cholesterol and my overall health hasn’t improved.

    I nursed my first baby until he stopped wanting his "comfort food ". I added solid food near his first birthday and beef was the main protein for his nutrition because I knew he needed a lot of nutrition to grow well. Now he is 6'2" and an MDPHD.

    Great talk, I really appreciated the slides comparing different foods by digestible lysine rather than the usual per calories basis. People who want to suppress meat from our food supply for ecological reasons are so wrong!

      Speaking as a researcher, what unfortunate is that Dr. B. is badly misleading people about protein. Most people in wealthy nations get TOO MUCH animal protein, and they would be healthier if they got less.

      @@aliendroneservices6621 Yes, meat comes in packages with a label, but I'm sure he is talking about the "nutritional" labels that give the percentages of fat, protein, number of carbs, etc. Fresh meat and vegetables don't have nutritional labels. That's what's on a keto meal plan.

      yeah when I have time I eat home made food but sometimes work gets crazy and I’m on sites all day and then I pop to the shop. Its nearly impossible to find food without seed oils in even though the food might meet keto macros. I’m getting pretty damn tired of boiled eggs and biltong (jerky) though 😹 sometimes you fall off the wagon though

      Supermarket meats & vegetables usually do. I often eat frozen vegetables, minced beef, canned tuna, boxes of eggs, cartons of cream etc. And these always have the nutritional labels on them.

    A good talk, but it leaves out a key point.
    DIAAS gives a score per food, not per meal or per diet. That's important because by including different protein sources that are deficient in different amino acids, they can complement each other. That's why vegans diets can be perfectly healthy as long as they're varied.
    But I do still agree with the point made about poorer countries. A good vegan diet requires the ability to select freely from a variety of affordable protein sources, and the education to combine them correctly. If a country lacks that, then it's much easier to just supplement their meals with an egg.

      it is scary to see people go vegan and not know all this stuff. I had friends who end up in the hospital, they are fine now, eating red meat, they never did the proper research.

    A really powerful presentation. The message about the low presence in plants of limiting amino acids, for instance lysine, is so important, & likewise the environmental & health reality of neglecting to address this deficiency in plant sourced protein. Thanks so much for this crucial information.
    Bioavailable protein is clearly a huge issue globally, & even more so for girls & women.

      Yes! Especially as many cultures favour giving the best quality protein to boys and men. And then, if you're looking at red meat, the women also miss out on the bio-available iron, despite having a greater need than the men.

What is your perspective on the majority of grain/corn grown in the US is used as animal feed and is that figure acounted for in the environmental impact of animal protein?     I wonder that if you provided pigs with an unlimited and varied diet if the favorite that they gravitate towards wouldn’t have the ideal mix? (see book called easy like the animals) but like ideal for pig and ideal for consumer might not be the same.

    There's one situation where too much protein is harmful. It's if you don't have enough fat with it, this is called protein toxicity, or less formally rabbit starvation.

    IIRC the 9 Calories per gram figure for fat assumes a certain length of carbon chains in the carboxylic acids, and medium-chain triglycerides (in coconut oil and butter) are closer to 8. Presumably short-chain triglycerides like triacetin have even less energy per gram, but I don't know how much.

    Wow , I was married to a family practice doctor MOST will not even entertain this as thought let alone a reality ! It's so basic you do not need to be that well educated to understand that throwing sugar ( all carbs ) into a machine that can not tolerate sugar is kinda dumb . And that's the diet program for diabetes 😂

      @@steakovercake3986 With sugar, the dose is the poison. Tim Noakes states that that dose is about 1 tsp/dL. With sugars being in just about every processed food, no wonder we have a diabetes epidemic. The body can perform gluconeogenesis if it has to, but works amazingly well on just meat and fat alone.

    Important to note that enough Sodium is needed for absorption of Vit C - including in the gut and brain. For this - amongst various other reasons - a diet low in salt, is not beneficial. Interesting to take note of the suggestion that Heart Disease could be a form of Scurvy.

    I don't think we should worry about enteric methane at all. Methane oxidizes away within few decades after it's released. If the methane released today is really such a problem, we can just do stratospheric aerosol injection for a few decades to completely offset the warming.
    The reason stratospheric aerosol injection isn't good enough for CO2 is that fossil fuel CO2 persists as a distortion of the carbon cycle for geological timescales. It isn't right to burden untold future generations with an unending obligation to maintain our SAI. If we decide to offset enteric methane release with SAI, the only generation we're burdening is our own.

      Insulin also activates MTOR. Because of this, eating a high carb diet is likely more aging than eating a high protein diet.

      Also, if you understand associations, you realize that the association between meat eating and cancer is so small and inconsistent as to be utterly meaningless. People keep looking for possible mechanism about how meat can cause cancer when there isn’t even a meaningful association.     Liked the talk, there are some things I am going to look up in the future like wheter there is a limiting amino acid for humans, since his data seem to be based on other animals. The questions in the end werent too good though. Asked questions to get their opinion confirmed.
    What I would like to know is how to create a vegetarian or even vegan diet to meet the amino acid requirements. Since it is a personal choice of people (until politicians force us some day to go vegan) I am not bothered by it, yet it would benefit these people if they could adjust their nutrition.

      Ever since I went on a vegetarian diet my health went downhill very quick. The research that I have done in the past 25 years and and the most recent research thanks to Yuotube videos like this one confirms my decision to stop eating, grains, vegetables and fruits. I am basically on a ketogenic diet and most of the time a carnivore diet. My health has improved tremendously. It takes time to remove insulin resistance just like it took years for the build-up it will take years for it to balance out. My conclusion is that that without animal protein and animal fats human beings cannot be healthy. It's part of our genetics which cannot be changed. For hundreds of thousands of years mankind has lived as a hunter and a gatherer. We did not eat vegetables and we certainly did not eat grains which have only been utilized for the past maybe six thousand years. And given the fact that they have genetically modified foods and hybridized Foods it means that we are introducing foreign proteins into our diets which causes inflammation. Check out RUclips videos on the dangers of lectins and other dangerous compounds in vegetables and you will be shocked. Also grains contain phytic acid which binds with minerals in our small intestines and makes us minerall deficient. I could go on but there's way too much information and I am not trying to educate anybody here. Everyone must take responsibility for their health and do their due diligence. End of story case closed

    I would really love if one of these talks would get into gourmet mushrooms. From everything I've seen they're pretty close to meat as a nutrition source when cooked properly (though giving up animal based is never something I'd suggest)

      i doubt they would offer enough though. i doubt they have as much fat as well as vitamins/minerals to equal what you get from beef. i add mushrooms to my diet mainly for flavor, but i still think plants (or in this case fungi) are good "supplements" to a good diet

      Gourmet mushrooms is an oxymoron.
      (I have a food intolerance to mushrooms and they make me throw up.) So, from a nutritional point of view, they are definitely a negative for me.

    My question is what about doctors that say too much proten - especially in mid age - is a risk for cancer. Wouldn't "high quality" protein be the same. And as those doctors point out, you don't need the same level of protein all your life... and, in mid age.. you need less. Elderly you need more.

      Doctors who say that meat is a risk factor for cancer are basing that assertion off of totally unreliable research. There’s no good evidence that eating large quantities of protein is deleterious to the health in any way for the average person.
      Doctors who say that “too much protein” is a risk for cancer don’t know what they’re talking about.

      Heirachy of evidence and correlation vs causation. Thats the root of this problem.
      We need to find a way to educate people on what the heirachy of evidence is and how to rank their information within that heirachy.
      That way people can understand what science can and can't tell us or whats science and whats statistics.

    Why riot over the question of the accuracy of calorie counting? I assure you that I have had much, much better things to do in my life than count calories. Estimating macros is pretty doable. But a calorie is not a calorie. Sugar does not equal protein does not equal fat. I think you may have noticed that nobody in the audience looks like they are even THINKING of rioting, in fact the audience, overall, seems glad to hear this man’s information.

      Historically fresh meat had been universal cure for scurvy. Any fresh meat, not just liver.
