Obviously this is not a real s21 Ultra. It's a plastic model they use for display purposes (or a fake) - that's also the reason why he doesn't show the display. The real s21 Ultra's back glass and lenses cannot be scratched by razors and screw drivers as it's Gorilla Glass.
