    Mole isn't sweet. Dont forget that Mexican chocolate is not sweet, either. Everyone's mole is different, and the ending flavour depends on the mix of spices. Yes, there's chocolate, but it's non sweetened Mexican chocolate. Its a very, very complex sauce which includes chocolate amoung the 30 something other spices. Its hard formist people to imagine what a mole tastes like, but trust me... It's nothing like Nesquick!

      There are several variations of mole, and some are very sweet. Oaxaca has one version that is flavored heavily by golden raisins.

    Mole is not a sauce that goes on everything. Just certain dishes. Abuelita chocolate is more popular in Mexico than the US, but is used to make Hot Chocolate and Mole sauces.

      Abuelita hot chocolate is made in the US and Canada and kinda tastes old to me. If you want really good Mexican hot chocolate you need to get Ibarra which is actually made in Mexico.

      There are many different regional moles and not all have chocolate in them. The common ingredient is not chocolate but ground seeds and chiles.

      mole isnt even a sauce. its a type of sauces and its pretty rare for any 2 moles to be the same. when you have 30+ ingrediants, the flavors can vary wildly.

    It's not Nesquik. Nestle just owns the parent company of Abuelita. They aren't the same. Hershey's owns Cadbury, they aren't the same product.

    My wife was born in the UK, her step father was in the US Navy. She first lived in Texas and move to Phoenix Az. Her Mexican food was better than any restaurant I have ever tried. She passed away last June 30th. I would have invited you for some great Mexican food. I hope you get here and explore our great country. I truly enjoy your reactions. Take care young man.

    Actually Thunder Rosa’s real name is Melissa Cervantes. She’s been working for AEW for the past number of years. She is a councilor for at risk youth place when not wrestling. I think Rosa was the one Sexy Star purposely hurt in the ring. It was a match but star just went too far and just kept tightening her grip until the referee had step in. Rosa ended up with a near dislocated shoulder and talked about it online. Thunder Rosa has been on WWE’s watch radar for a few years but never actually approached her about a contract as she was still under a contract with another company and under law you can’t poach a contracted employee.

    Mole is amazing. Nestle chocolate was founded in Switzerland but has been extremely popular in the U.S for over 50 years or more.

    It's worth remembering that large parts of the USA actually were parts of the UMS. There are people who were Mexican one day and USA citizens the next.

      ​@@LucasAndrowicklol reminds me of when I was having a discussion with a Filipino when I said Filipinos aren't Hispanic because not enough people speak Spanish and less than 2% of the population has Spanish ancestry....then I was technically the US is more Hispanic than the Philippines more Spanish speakers half was under Spanish rule and a lof of southern cuisines have sime Hispanic influence

    Texan here. A lot of people are under the impression that Tex Mex is just an Americanized version of Mexican cuisine and this couldn't be farther from the truth. Texas was once a part of Mexico, so the cuisine is Mexican. When Texas gained Independence from Mexico, the cuisine developed independently of Mexico as Tex Mex. It is a regional cuisine unique to Texas. The same is true for Cal Mex, which is California. It was also a part of Mexico and when it was separated the regional cuisine developed independent of Mexico in the same manner.

      Also Arizona, then you go into NV, UT, and CO and get a different blend of all types.
      Mexican food is wonderful!

      What all these US border hyphenated Mexican cuisines are related to is the food of the adjacent Mexican states of Chihuahua and Sonora although in California especially immigrants have opened restaurants offering food from all over Mexico and Central America. Fish tacos, for example, are a “thing” from the Pacific coast of Mecico that became quite popular in southern California.
      I live close enough to the border with Sonora that I can and have driven to Mexico to eat and while the food offered is excellent, which is why I bother to go there, it’s not that different from what’s available in the US border regions.

      @@BTinSF There are also differences. Fajitas is uniquely from Texas. Marinated skirt steak was first used by the Vaqueros in both Texas and Northern Mexico, but it was introduced to the wider public in Houston. There is a lot of cross-over in cuisine over the border.

      @@sitara68 I've been getting fajitas from my local Mexican restaurant south of Tucson for 20 years. My guess has always been that it was invented along the lines you suggest although "Vaqueros" aren't unique to Texas. I am surrounded by open range in Arizona that extends across the border and comes with real "cowboys"/vaqueros, usually armed with guns on their hips (at least when they come into a fast food joint for lunch).

      @@BTinSF Fajitas was introduced in Houston, Texas to the wider public at a Mexican Restaurant by Mama Ninfa in 1969, so I'm not surprised you have been getting them for 20 years.

    El Dorado was the mythical mezzo American city made of gold. The Spanish spend great sums of money looking for it. You will get arguments from the Carolinas & Memphis about Texas being best. I prefer Texas BBQ but the others are very good too. Enchiladas are meat or cheese filled, rolled up corn or flour tortillas with a sauce. Mole' with a little cocoa is fine. Abuelita means 'Granny' & some people use it a lot.

      Mole is the Mexican home made from the desert in Mexico. The same as our sofrito in Cuba. It's used in every way as a
      seasoning. I cook me and keep the fresh reasoning in the freezer until I need it

      I don't particularly like Tex Mex because I always feel like it goes one step over the top, but this just looked like a bunch of Saturday bar food, not Tex Mex.

    Mole is a very classic Mexican sauce that every mom knows down there. It’s always different house to house as the recipe differs but the only thing that every mole has in common is Mexican chocolate is an absolute must. It’s the only base they use but everything else differs greatly. You don’t really know what you’re going to get but it’s still really delicious.

    Not to diminish Texas...but there are locally-owned (by Mexicans) all over the US. I'll say this...I've not traveled Texas and tried their food...but my thought is, if a Mexican can't make tex-mex, something is wrong 😅😅😅

      They can. But TexMex is not the same as Mexican food. Im telling you as a hispanic person literally in Texas. Its only authentic in Texas, just like every other food is authentic to their origin.

      As someone born and raised in Texas. In my adult life I’ve lived in a lot of different areas in the U.S., any “Texmex” I’ve had outside of Texas has legitimately made me gag. It’s completely garbage. Even the worst texmex in Texas is better than 4.8 star (1000 reviews) “texmex” restaurants outside of Texas.

    "Eldorado" was the legendary City of Gold in mesoamerica. The Spanish conquistadors looked for it a lot; Edgar Allan Poe wrote a poem about it. Thus the jokes about "who knew it was here all the time, in a car park!?"

    Just moved to Michigan and I’m in full Tex Mex and BBQ withdrawal. This makes my heart ache and my tummy want to devour itself. It’s a calorie bomb that’s a special treat to do for events/nights out. So hungry now…

    Twenty years ago, when I visited Europe, all Mexican food in Europe I encountered was actually Tex-Mex. It seemed to me that Europes only exposure to Mexican food is Tex-Mex and so when you think of Mexican food, (tacos, burritos, quessadillas, fajitas, refried beans & spanish rice) you're actually thinking of Tex-Mex. Let me know if this has changed, has Cali-Mex, or traditional Mexican/native american food made it over yet.

    Nothing better than restaurant tortilla chips. I’ve found just the faintest dusting of chili powder on store bought chips and then heating them in the oven for a minute or two can get it a little closer to restaurant style, but there’s really no beating it.

    When comparing fresh house made tortilla chips and anything you could buy in the store (including Doritos), there is no comparison. It's the "same food item" but it's like they totally different things. You have not had real tortilla chips if you've never had fresh made.
    And yes, mole is a glorious dish. I've had probably five different kinds of mole, and the chocolate one they tried is one of my two favorites.

    Our son lives in Austin, Tx. We went to try this place a few weeks after this video came out. Couldn't get near the place. We will try again in September/October during our next visit. Terry Blacks Bar b que was too full to get near. That's also on our list.

    I was introduced to TexMex food by a Mexico coworker of my husband. He taught me how to fry the tortilla in lard, to make a taco shell. And I love Mexico food, but my taste buds rebel!

    Mole is always savory, a tiny bit salty 15 or 20 spices more, cooked a long time. Mole is a kind of sauce.

    The Mole is made with dark chocolate so it isn't sweet.

    Tex-Mex and Mexican food are similar but they are both very different. Tex-Mex has its own bold intense flavors and salsas and Mexican Food also especially regional Mexican food is so very different all over Mexico. I love all of it both Tex-Mex and also different regional Mexican food, especially Mexican food from the city of Oaxaca!! Very famous Mole Negro salsa! Mexican food and American Chili;s have used a little bit of chocolate as an ingredient to give that food flavor more depth and more rich tasting.

    Mole is one of my favorite things ever. I live in an area of the US with a very large Mexican-American population and a very sweet old abuelita once saw me looking at the pre-packaged mole sauce. She explained to me how to make it taste even better and how to prepare the chicken, what to serve on the side, etc. I've since made my own mole from scratch, but honestly? Her version using the pre-packaged stuff as a base is still the best in my opinion.

    Texan here living at the border of Mexico in the Rio Grande Valley. I LOVE Mole 😊Because the indigenous peoples of Mexico and Central America were the first to cultivate cacao trees and did not have cane sugar, they used the chocolate with lots of other nuts and spices in oil to make a savory sauce: mole. In Texas, Mole is often very slightly sweet to be a little easier on the Texan palette, I imagine. When you come, you have to try it! Love the videos!

    Cocoa powder is not naturally sweet. It becomes sweet if you use it for confections or sauces or chocolate milk products etc. The same with cinnamon. I use cinnamon when I make cowboy beans along with chopotle to intensify the heat without overwhelming the flavor. I have used cocoa powder carefully to darken savory sauces. Pair these with other spices and it can add depth to the food.

    My parents lived in Texas in an area where tex-mex was everywhere but authentic Mexican food was not. I can't explain the exact difference between the two but they aren't quite the same. Never had mole. I share your feelings on that. Tex-mex much more likely to use ground beef. Mexican dishes rarely do.

    Mole is a Mexican dish that like he says can include up to 32 different spices that you add to it, chocolate being one of them. The best mole comes from the state of Puebla and Oaxaca.

    My daughter uses Abuelita for her Birria recipe. There is a reason why Texas is one of the most obese states. It has some of the best food.

    Missouri is also known for its bbq, especially in Kansas City. You can also find a Mexican restaurant in just about every town.

      Yes, many foreigners don't know that a number of states specialize in BBQ. I think people in these states need to suggest them watching some of the the state BBQ competitions, individual competitions, etc. Or, videos on regional cooking or BBQ get togethers.
      I live in a border "town". Just about every block, often times more than one, in my small city of about 25K people is either a Mexican fast food, hole in the wall joint or restaurant. There's not a bad one in the city. All owned, operated & staffed by families. Exactly how I like my Mexican restaurants, lol. There are so many Mexican restaurants that there are less than 20 other restaurants in town, ie: fast food, ocean front fine dining, steakhouses, seafood, sports bars, breweries, etc. Sure do wish we had some great BBQ here! We have to go a few towns over to get anything passable. :( Lucky you!

      @emmef7970 it's funny because in Missouri, many people make their own bbq. We have 2 smokers and a grill we bbq our own meat and have developed our own combination of wood that we prefer. We rarely buy bbq at a restaurant. Lol
      I grew up on Mexican food. I'm with you on the family run restaurants. You just can't beat the authentic flavor.

    The chocolate used in mole is not sweeten. It's in its original state, very bitter. All mole (dozen of kinds) contain chili peppers.

    Mole includes chocolate and many different roasted spices, herbs, nuts, and chiles. Moles are so complex there really isn't a singl;e recipe.

The mourning mole used when someone passes takes a lot of work to make. It contains tomatillos, chile peppers, seeds like peanuts or pumpkin seeds & the main ingredient cacao/aka chocolate. Its wonderful as its not sweet but savory.

    Texan here, too. There's about 5kg (two breasts, about 5-6 lb each) of turkey in my smoker about to be done for dinner, (and sandwiches, and more dinners) but we're having chips and queso, snacking while the meat finishes up. *grin. I look forward to you visiting our state. Bring stretchy pants.... :). *By the way, it's helpful to remember that Texas (and a good bit of connecting states) WAS Mexico, fairly recently, compared to European history..

    Abuelita hot chocolate is popular in the hispanic community in Maryland too we're close to the capital. Mole is savory but man Mexican food or Tex Mex food is always delicious! Hat's off to my Mexican friends! Being from Ecuador I had to adjust my taste buds to tolerate the spicy food

    Choclate is traditionlly from Mexico. Add 32 types of chiles makes real mole served on Sunday and holidays over chicken. Super spicy. Mexican national dish.

    You come to Austin, try this guys mole. And the chili. I live an hour and a half away from this place and it is well worth the trip. Award winning is a good way to describe it. Excellent chef. Try Abuelita, too. You can get it at the nearest H.E.B. Abuelita mean little grandma in Spanish. It’s a hot chocolate in disk form, so you have to break or cut or grate it, and it’s got traditional Mexican spices to make it extra tasty.

    Don't forget that there is also subcategories of Tex-Mex. Obviously Tex-Mex is a mixture of American and Mexican takes on Mexican cuisine with more of a focus on meat. Although most of them take after Texas and there style there's also New Mexico style which uses a lot of hatch green chiles and I honestly think it's the best in terms of flavor. Arizona style is sort of a mix with a higher emphasis on cheese from what I've seen. It's small differences but having tried Mexican food in Texas New Mexico and Arizona I can honestly say they all taste pretty similar but there's small differences you will learn to appreciate the more you eat.

    I think Ollie meant it was 'messy' looking so it didn't look good in the 'neat & tidy' way, maybe?
    Mole is pretty good. I should send you some Dona Maria, Mole it's not "out of this world" good as Moles go, but it is quite good, imo, if you've never had Mole that IS 'Out of this world'
    Abuelita is popular in MEXICO, and cooks in the know use it.
    Also El Dorado is an actual place, a movie mentioned (usually in a 'staring role') in many songs.... It's kinda famous-ish.

Chocolate is rich in flavonoids, helping to protect your cells and organs from free radicals, and it provides you with an energy boost. Add tomatoes for an extra health boost. Mole is often served with chicken but goes great with beef or enchiladas. You can get creative and serve with rice and/or tortillas with added salad greens, sliced avocado, and chopped tomatoes for a simple but special meal. I even saw it served once with poached eggs.     My most favorite sauce would be mole sauce and on cheese enchiladas, you just killed me. It has about 100 ingredients (exaggeration) in it if you make it from scratch but the results are beautiful.

    The restaurant is the El Dorado Cafe in Austin Tx, and it has a 4.5 star rating with the full menu and prices on the website. They gave the guys special treatment, as it says choice of one salsa and chips are free, and I hope the guys took the leftovers with them and didn't waste it.

    Molé sauce is delicious! It has it's root in ancient Aztec culture, and is made from a combination of ground seeds, chilis, and unsweetened cacao. It's not a dessert, but a rich, smooth savory sauce with complex tropical flavors.

    Tex Mex is delicious - and I lived in Phoenix for 20 years and had the best Mexican food ever - that is the only thing I miss after moving back home to Ohio (although I'm a pretty good cook of mexican!! I make a mean taco, mean enchilada and great cheese crisps!! Mole has mexican chocolate in it - BUT it takes nothing like chocolate - you would love it!

    I grew up in Texas, and one of my best friends was brave enough to tour Europe on his own. (The guy picks up languages like normal people pick up seashells.) He visited a pub, on time, and when they found out he was a Texan, he pay for another drink, all night. 😏

    Mole sauce is ancient. It comes from the Aztec culture. The base is pure unsweetened chocolate with dozens of other spices. It is savory. No sweetness.

    It sounds weird to have chocolate in savory stuff, but it's really good, Some of the best chili I ever had also had chocolate.
    When I'm feeling too lazy to cook dinner, I get takeout from the Mexican restaurant down the street, and I often get pollo en mole, which is a dinner of sauteed chicken strips in a sweet/savory chocolate sauce, Spanish rice, refried beans, lettuce, tomato, and corn tortillas. They also include fresh tortilla chips and salsa.
    Usually, I divide the dinner in half and have it for 2 meals. :)

    "Tex-Mex" is typically BEEF, that's the Tex part. Beef was very expensive and Texas was built on beef, but people from Mexico couldn't afford it as much so they used a lot of poultry and pork in Mexico instead(as did everyone who couldn't afford it). When it got mixed with Texas beef and other "Anglo" ingredients. .bada bing, you got Tex-Mex. It was the coming together of two cultures to make a beautiful cuisine!

Mexico has always been a "poor-er" country, was Beef available, yes in limited circumstances because a lot of the country is mountains and desert, not good grazing land. While Mexico laid claim to a lot of what is Texas, the Indians said different, ergo...they didn't raise cattle this far north, when the crackers showed up, we fought about it. It's not a theory, chief. It's geography, economics and politics. When Texas began raising most of the Beef for the country and Mexicans and white people integratedin food....more Beef was available, hence most Tex-Mexis Beef, occasionally chicken. Texas BBQ is about beef.

    Mole is a very traditional Mexican sauce. It contains cocoa, not chocolate, so it is not sweet. It has a very complex flavor and is hard to describe, there is definitely nothing that tastes like it. I would describe it as very rich, slightly bitter (in a good way), spicy, and lots of umami. It doesn't go with everything, but done right it can add flavor complexity to a dish. Cocoa beans originated in Central America (the area from Mexico to Panama), but traditional Mexican chocolate is much more bitter than what Europeans would know as chocolate. It is also common for their chocolate to be spicy, believe it or not, spice and cocoa actually go quite well together.
