18:49 honestly in America there is a range, but your basic level restaurant that would serve fried chicken would be 12 to 15 dollars for fried chicken with mashed potatoes
Now I do live in a city, with a lot of wealthy area around, so if you go into a more rural area you might find a slightly cheaper price.
However, you can find expensive restaurants selling food exactly like this for more than double that price
Obviously these restaurants will not be in the same area, it will be a rich area that has the expensive price

Collard greens are not supposed to be bitter. Yes they can have a bite but most people don't cook them with lemon. They cook them with a ham hock, bacon, piece of pork, a splash of vinegar but NOT lemon. Grits is coarsely ground dried corn that is boiled in milk or salted water. It's kind of like porridge. It can be savory or sweet so people have them for any meal.
I looked up their menu and you're looking at about $20 depending on if you get dessert. The entree comes automatically with two sides like potatoes and green beans. If you want additional sides then you'd pay an additional fee.

I live in Georgia and have been to Savannah many times. Savannah was founded in 1733 and was the capital of the Province of Georgia. Many convicts were sent here from England. The city is laid out on a grid pattern and has many beautiful squares with statues and one spectacular fountain.that is a must see. The city is saturated with history. During the Civil War, Savannah was captured by the Union General Sherman. He had been on a rampage through the South, burning every farm, town and city he came across. When he took Savannah, however, he said that the city was too beautiful to burn. He wrote to President Lincoln that he was making it a gift. The city of Charleston is only a short drive up the coast. It is also very beautiful and historic.
The food in both places is excellent with surprising differences, considering how close they are to one another. Corn and sweet potatoes are native to the Americas. Okra was brought here by African slaves who contributed so much to Southern cuisine, music and art. I really enjoy your channel. I would love to visit Portugal to soak up some of your wonderful history and enjoy your food and legendary wines.

Very good breakdown. If you come to America and love food, you will not want to skip on the South. The food is unique in almost every way, and everyone takes pride in their distinct differences. There are thousands of homemade recipes for the same dish all across the south. If you’re a fan of paella, the South has many dishes that are similar. Also, Savannah and Charleston have a reputation for being two of the most haunted cities in America. I flew in the Air Force all around the world and can honestly say Charleston/Savannah are still in my top 3 favorite cities….next to Budapest and Dubrovnik. If you come to America, don’t skip that area!!

Grits are one of the oldest foods in the Western Hemisphere. Made from dent corn/maize (not the fresh eating sweet corn) in a process using wood fire ash producing "nixtalmal" meaning "ash corn." Dried and ground into a meal

      @Rose-z4h6k 10 месяцев назад

This processing with lye, lime or other base breaks down the hemicellulose and frees the niacin preventing pellagra with corn is used as a staple grain. The unground corn kernels are hominy. If the corn is cooked, then treated with the base and ground is the foundation for the dough for corn tortillas and tamales.
As the poster above pointed out, corn is a Native American crop. It was breed in Mexico, Central America and South America. Trade spread it among most of the farming tribes of the western hemisphere. There are all kinds of amazing Native recipes for corn.
In New Mexico you will find chicos del horno, which is sweet corn which has been roasted in a wood fired oven and then sun dried. It is added to stews or cooked with beans. The Dine and the Pueblo peoples make a mush with corn meal and juniper ash, which is similar to grits. Pueblo Harvest (the restaurant at the Pueblo Cultural Center in Albq) made a version topped with carne adavado (pork braised in red chile sauce), scrambled eggs, cheese and green onions. It was divine. There are cakes, dumplings and steamed breads. There is kneeldown bread which is fresh corn, cut from the cob, wrapped in corn husks and baked in an underground oven.
Back east, the Cherokee make a fried hominy that is to die for. The Choctaw make a sour cornbread, which is a fermented cornbread. The fermentation process frees bound nutrients. There are stews and breads of all kinds.

banana pudding is a mixture of vanilla pudding (vanilla custard would be the closest European approximation i can think of) whipped cream, ripened bananas mixed into the pudding. whipped cream is folded into the banana and pudding mixture and then it's generally layered with custard, slices of banana, more whipped cream and the vanilla wafers. the restaurant also added pecan nuts to theirs for more crunch. it's sort of like a creamy vanilla and banana mouse, with cookies in it.

Beer and stuff you normally need to buy more of but basic drinks are normally unlimited. This goes for fast food and sit down places. Good sit down places will do what the lady in the video did and walk by to refill the cup without asking as they are not charging you for more refills so out of a very clear habit she was on top of refilling drinks and that is lovely. The greens are for money, the peas for luck, and the corn bread for gold. (Usually a meat, like pork/ham is involved). Corn bread is delicious and super easy to make if you have a cast iron pan (my pan belonged to my great grandmother). It's made with corn meal, so it has a grittier texture. But it's more savory than sweet (but a little sweet), and more bland so you can scoop up the juices from the greens for the flavor. "Gravy" tends to start with a roux all around the world. We just tend to not let the flour cook too long (too dark) and use sausage fat and meat instead of another fat, like butter).

Brown sugar is great ( has some molasses in it). And as someone raised in the south i grow the vast majority of my vegetables and fruits. Also, there ain't nothing in my house that is instant, and i mean nothing!! Tea in the south is sweet unless you ask for unsweetened tea. And there are different types of bar-b-que in the south. In eastern North Carolina, bar-b-que is only pork. Other foods like chicken, we call bar-b-qued ( with the "d" at the end), ex. bar-b-qued chicken. To answer your question: about $15. I refuse to pay that much - i cook my own ( and the homegrown chickens taste soooo much better). Summer collards can be bitter, if not cooked right, but i do like the flavor of winter collards much better. I do hope you get to try our food at some point. Its a true labor of love.

Personally i think the restaurants in Charleston are better than Savannah, that place doesn't look as great, lots of weird combinations that i don't like the sound of
I've never had grits with fish, but we do mix them with shrimp. Mostly eat them for breakfast though. And with eggs over easy, they're better that way so the yolk can run into the grits

That’s not cake-it’s cornbread! Wonderful stuff when made well. Personally, I really dislike collards-they ARE horrible. You’ve just never had true fried chicken if you think you don’t like it. The peach chicken looks and sounds amazing! Sweet potatoes are one of my favorite foods so I can’t imagine how good they would be with pecan butter sweet potatoes need to be baked in the oven so that they kind of caramelize. Corn pudding is good-not good enough for me to cook it, though. Sweet potato fries are amazing! Grits are ground corn and are delicious when cooked properly. They’re typically a breakfast food (extra good with lots of butter, cheese and crumbled bacon) but are also used in other dishes such as shrimp and grits. If you know what polenta is, it’s typically made with what we call grits. It is easy to grow corn and potatoes in the south, so we eat them in lots of iterations. Okra is best fried in cornmeal or cooked in a gumbo or stew. The price of a meal totally depends on where you are. You can go into a little diner (what some call a greasy spoon) and you would probably pay less than $10 but it would go up from there depending on the location and restaurant. Sweet potato pie is pretty good, but there are others that I like much better. Banana pudding, made right, is swoon worthy! I don’t like coffee so the other pie would not appeal. I know they’re British, but who chews ice cream? Savannah is on my bucket list to visit, but only between November and March-it’s hella hot!

The simplest way to describe grits is as coarsely ground corn (so, not like powder or flour, more like rice, actually), and typically is prepared by boiling it with water; personally, I add some butter to the mix as well. Some people enjoy grits with cheese, personally a bit of salt is all I need. While corn is something like 'the rice of the south' ("it seems like they use it for everything"), grits are most frequently served as a side dish for breakfast, and they go very well with eggs (I habitually mix my eggs and grits together on the plate), and sausage or bacon. The texture can vary, depending on cooking time, from a sort of creamy rice consistency to something more crunchy.

Grits are coarsely ground and dried from maize or hominy, kind of porridge-esque. The trick, though, is that you don't want soupy grits. And many places I've tried grits at (though I'm sure not all) will serve them with just butter and then you salt them to your taste. I've had cheesy grits before, and I've heard of sweet grits but never tried them sweet.

I'm sure it's been said, but grits are sort of an American Polenta. It's generally made with Hominy corn that's been ground instead of a traditional cornmeal, and is often made with some milk or cream, and butter. It's usually a little bit looser than polenta.
In the southern US, we usually have it for breakfast with eggs and toast, but it can also be served at other times with things like shrimp.

Grits are ground hominy corn, just like polenta, except grits are not ground into meal, but left bigger, grittier. Usually grits are white corn, too, rather than yellow. And while polenta is often cooked to a creamy texture, much like risotto, grits are left more toothsome, and served looser, often with only butter and salt, but bacon, cheese, sausage, and shrimp are also popular with grits. Cheese, sausage, and green onions, for me please, or just plain with butter. I love grits, even yellow grits.

One thing that isn't often mentioned - in the US, if you get non-alcohol drinks (like soda, tea, lemonade, etc) you almost always get free, unlimited refills. You don't even have to ask for a refill, the server generally just keeps an eye on it and tops it off when your drink starts to get low.
In general, a meal at a place like this would be around $7 to $12 or so, plus a drink, which is usually $2 to $3 or so.

My favorite kind of sweet potatoes are served like regular baked potatoes, but stuffed with barbecue , sour cream, butter, cheese, bacon, green onions. I do love a good sweet potato pie…
Greens are not supposed to be so bitter that you can’t eat them. Like everyone else said, they usually get a little tiny bit of vinegar, but mostly lots of smoked meat, onions, seasonings. I don’t know what’s going on with those greens. I’d have to try them. Those sensitive English pallets, sometimes get things wrong, lol.
Banana pudding is my favorite with extra cookies. 😊
From my understanding grits are ground up hominy, which is basically a type of corn. All I can tell you is I love grits with just butter and salt. I usually have mine for breakfast with fried eggs and bacon or breakfast sausage.
