- This week I have a cook on the Hamrforge Old Ironsides reverse flow smoker. I loaded up with lumpwood charcoal and cherry wood for smoke, then set my Meater plus probe in the spatchcock chicken, before cooking in the smoker, until the chicken reached an internal temperature of 74deg C.
The skin was delicious and crispy. Temperatures were nailed with the meater thermometer.
I've been cooking on this grill a few times now and am seriously impressed.

Hi Marcus, looks great. Quick Q - don't you wanna pull the chicken a bit earlier so allow for temp rollover?
Yes you can do, but it was -5c when I was filming so I didn't plan on much rollover
