  • Sometimes you just want to cook up a nice simple meal on the BBQ, and a tasty bbq roast chicken is hard to beat. Here I simply seasoned the roast chicken and placed on a bed of squash to soak up the juices. And cooked to 74 deg C with the temperature nailed with the Meater.

Fantastic cook, chicken and squash looked lovely. Great to see you've found a use for disposable BBQ trays 🤪

Do you use any deflector plates? Or just the tray?

Hi! Great video. Do you find there’s less smoke if you leave one side without a deflector plate? If so this might have solved my problem of wife not liking too Smokey profile! (Have tried a clean and different coal already!) cheers !

Strong Smoke can be a few things, from poor charcoal, too much wood or fat dripping on coals.. for less smoke use good charcoal, less smoking wood (one small chunk of cherry good for chicken) and place a tray under the chicken to catch fat as it drops

I think this year is going to about cooks like this. Many people simply don't make the same disposable income anymore.
