Brilliant recipe and tutorial! I’m a super slow cook but for some reason I made these tortellinis fairly quickly (Ok I made a half batch but even so). I had to consciously slow down my eating because they tasted so darn good. My mouth is watering now as I remember lol

Hey :) Recipe looks great! I was just wondering why the scraps can't be used to make more circles? I usually do that for biscuits etc don't see why it can't be done here
Hi thank you! Because pasta dough is very thin when it gets rolled out and needs to be delicate the pasta will become too thick and tough. A dough for biscuits or cookies is completely different than a fresh made pasta dough
So, I literally have adhd and might have missed it... But you can freeze the tortellini itself while it’s raw? Or do you freeze the dough & filling separate. Idk what difference it would make either way but I just want to make sure. :) Also... what is a good amount of salt to put in boiling water for pasta? I put a lot but feel like I’m using more than I need to. I’ve tried using less and it would stick. I can’t wait to try this!!
Just Me hi no worries! Yes you just freeze them raw. That way when you go to use them the next time you’re cooking them! Usually if you buy fresh pasta like tortellini or ravioli from an Italian deli or comes frozen. I have the full instructions on the blog post about what to do for freezing or refrigerating! Hmmm well it depends who you ask on the salt question haha. People will say make salty like the ocean. I usually do a few cracks of a salt grinder or maybe like 1/2 tbsp I never measure it out so it’s hard to say. I think if you google how much salt to use per cups of water there are charts. But yes if your pasta is coming our way toooo salty like you can’t eat it without needing 30 glasses of water then it’s definitely too much haha

Yeah you can definitely sell this as vegan as long as you use unbleached flour instead of bleached 😊
Whole foods had the kite hill brand , but it's 9 bucks a package. Sometimes it goes on sale

Do you really need nutritional yeast or tofu?
Yes that is what is makes the filling for the vegan ricotta. If you would like to fill it with something else then you can skip it.
