He becomes cold as a facade to try not to give away too much so when he's with the gang he's just acting like a tough guy but as the part 5 goes on he ends up actually becoming colder. Which makes sicne if you think about it. His quest was to become an actual gangster and any gangster or mafia movie shows that the characters end up becoming colder as they transition from petty criminal to a boss. I think that's what was supposed to be shown but because giorno's growth happened over the course of what I think is either days or weeks within the craziness of that is the jojo universe it seems a little fake/rushed to most people and is easily missed when put next to his gang who have the Jojo energy we're use to. Oceaniz has video where he goes over it. You should check it if you wonder what I'm talking about with the "gangster movie formula".
