My mother used to prepare chutney pudi with roasted gram dhal, red chillies, tamarind, salt, coriander leaves and plenty of dry coconut. For chutney she used to add warm water to required consistency and add seasoning. My mother used to do this 65 years back. Your cooking reminds me of my mother. I tweaked it a little - I didn’t add fresh chilies, I added dry chillies instead and dry roasted everything without oil bcoz I’m making this for my brother who lives in a different state and I want him to be able to store this for a much longer time. Very nice Gita madam... you are making life easy for busy youngsters who want home food. When i was in the US 30 years ago, i started making these premixes especially when our family went for few days trips to Disney land, etc. That way it saved money, time and also the satisfaction of home food when you are really tired to sit at a restaurant when you are out sightseeing the whole day. I used to carry a small rice cooker. First make tea or coffee and then breakfast with premixes, sandwiches and poliyogare, or lemon rice, curd rice etc. With premix. What fun it was! From then on, i have habit of making premix for many things. I make tamarind paste at home by rinsing these tamarind, about 250 gms, cooking with enough water in pressure cooker for 3 or 4 whistles. After it cools, take out the pulp which is soft as butter. Then put it in a pan and give it a little boil after adding about 1 small cup of salt. Cool it and store in fridge. It lasts for months. This way u can use instantly in many dishes and also you won't have acidity problem because tamarind is boiled well. Also with the same tamarind pulp, half of it, i make sweet chutney for samosas, Bhelpuri, dahiwada etc. Another thing i have been doing for ages is, i make seasoning (tadka) and keep for a month. I use dehydrated green chilly pieces, curry leaves which get dehydrated in the fridge itself when kept open for a few days. Then in 1 cup hot oil i put mustard seeds, jeera, udid dal, dehydrated green chilly and curry leaves pieces and hing and make seasoning and store it in a bottle after cooling. The aroma is too good and it can be added to chutneys, curd rice, buttermilk, raitas etc. Even you can just add to boiled vegetables after adding salt and coconut if you want to reduce oil intake. I save so much time this way. I have so many tips like this and when i see your videos, i admire the way you ate making the videos so patiently and lovingly. I don't have that talent!!❤

Excellent recipe, Gita ji. Also wanted to tell you, I prepared killi potta sambar yesterday. I did not use onions and tomatoes. So my mother said it tasted like a dish called mendiya mashiyal which she used to make. The mashiyal as it’s name suggests has more methi seeds in it unlike the sambar. The sambar was great. Great idea!

Hello Ms Gita! I saw your recipe for Chutney premix just now. V happy to see my mother in law's recipe more or less. Fifty years ago as a young bride in Hyderabad I observed her making this dish. There was no mixer blender available then. So she would grind the roasted channa dal and keep it in a container. Whenever we wanted to make Chutney, she would mix some grated fresh coconut, tamarind juice, coriander and curry leaves chopped v fine, salt and a pinch of jaggery powder with minced and roasted green chillies. All mixed together with seasoning of mustard and importantly asafoetida worked a miracle producing a tasty Chutney of fresh coconut without a mixie!
It is a good reciepe mam... Got some more idea.. instead of green chilli,we can use dry red chilli.. and dry the curry leaves and then roast it... Also add some amchur powder, to add some sour part.... So that we can have this chutney directly with water instead of curd.. thank you mam 🙏

This is going to be very useful. Thank you so much ma'am. I am a pure North Indian from UP and Bihar but I simply love dosa , idli & especially coconut chutney. When I go to a restaurant to eat idli , I get my chutney bowl refilled 3-4 times. ( Here in Bihar , I don't know why they serve the coconut 🥥chutney in a very small bowl ).
