Hey Catherine, I'm also an enchilada lover as you are and really like your videos! When I make my enchiladas, I like to make them more "Tex-Mex" (I'm a ex-Houstonian) by combining a regular can of red enchilada sauce (I like Old El Paso) with a regular can of chili without beans - I use that to coat the bottom of the dish and then spoon over the enchiladas then top with cheese - really good!

We love Mexican food so much and it's getting harder to find good restaurants in our area.
Growing up I remember big pans of enchiladas and that wonderful aroma in our house! 😘 And quite frankly I think homemade enchiladas are the best! 😋
Your style of cooking is so familiar to me because my mom cooked very much like you! ☺️ All of your recipes remind me of my youth and the way I was taught to cook! And now watching your videos, I remember the wonderful meals I had growing up! 😚 That's why I love browsing through your website when I'm trying to figure out what to cook! 😉

I enjoy your videos I make my enchiladas sometimes with just cheese and onions no meat and maybe black olives I make my own sauce and thicken it with flour my mom used to make us enchiladas with no meat for our bday when we were children yum God bless mm el Paso

I love enchiladas. The best thing about them is you can use any kind of protein you have cooked up. It is a great way to use left over chicken, beef or pork.

You must be a mind reader! Just last night I was thinking how good enchiladas sound! I’ll have to go to the store for some enchilada sauce and then I’ll be enjoying these, and they sound delicious! Thanks! PS - I noticed you dragged your knife across your cutting board to gather your onions. If you use the back of your knife instead of the sharp side, it will save your knife blade.
I just made a pan of ground beef and cheese enchiladas and a pan of chicken enchiladas to take to a card party yesterday. Everyone liked them.

Just out of curiosity, I wondered if you could tell me what brand of corn tortillas you like to use. I am picky about tortillas, as I think many of them lack flavor and fall apart too easily. Thanks!
