How to remove the meat from a lobster

  • Here's an easy-to-follow video on how to remove the meat from a lobster.
    Step 1: Prepare live lobster:
    First of all put the lobster in the freezer for about 1 hour 30 minutes to two hours - this will effectively send it into a deep sleep. Take it out of the freezer and at this point I always give the lobster a kiss -- I have always done this, it sounds a bit silly but it just makes me feel a bit better for what I am about to do. Put the lobster on the counter, on its belly, with its head facing you, place a sharp knife on the lobster's head, behind its eyes. Press down through the lobster with the blade of the knife and then pull the knife swiftly towards you -- and that's it, you are ready to cook it.
    Step 2: Cook lobster:
    Put the lobster in a large pan of boiling water on the hob - put a lid on it, re-boil and then simmer gently for 20 minutes (this is for an average-size lobster of about 1.25kg). After that time take the pan off the hob and place in the sink under a gently running cold tap for half an hour to cool it down. That's it -- your lobster is cooked. A quick tip; overcooking can cause the tail meat to toughen and the claw meat to become hard and chewy.
    Step 3: Remove meat:
    Now to remove the tail meat in one piece; pull the tail away from the head and then, with a pair of scissors, cut through the shell on either side. The tail meat should come out easily now. For the claws; using a rolling pin, crack the shell to remove the meat from each one. Finally, for the little joints; use a small knife to scoop out the meat.
    Serving suggestions:
    Suggestions for serving include; salad, cocktail, risotto, sauces, bouillabaisse, bisques, soups, stir-fry dishes - I leave it to your imagination!
    Don't throw your shell away either - you can use this as a base for stocks, soups, sauces and oils.

    It always amazes me how videos like these always seem to receive so many comments from so called "youtube experts" stating things like "you're doing it wrong".... "that's not how you do it" etc.. etc.. yet those same people don't even post what they perceive is the correct way of doing things LOL.
    Don't let people like that bring you down, you've made a very nice tutorial, thanks for sharing.

      Something like your comment eh, if you think this is the correct way to do it then it's the only vid you've ever seen on how to shell a lobster. Been commercial fishing lobster for 30+ years and am laughing at how he does it. No need for scissors or a rolling pin, that's just a sign of an amature. How to remove meat from tail, remove tail from body, break off all tail fins at once, push meat out with finger, you now have the tail meat in seconds. Claws, holding claws on the edge, hit edge with larger knife, twist, shell is broke and meat is out, again in seconds. Knuckles, pretty much the same as the claws. LMAO, using a rolling pin to smash the claws just puts bits of shell in the meat. Ohh yeah, lets not forget about the body, lots of meat in there as well which he didn't remove. Also he didn't devein the tail, don't know about you, but l sure don't want to eat lobster shit, lol. Yep he's a real expert on how to shell a lobster alright. So tell me mkrdjs , how do you perceive is the correct way to shell a lobster?? Let me guess, you've prob never shelled one in your life but felt the need to comment on what everyone else says how it should be done. Anything else you need to know about a lobster, rotf.

I know I can do it better then that so called chef and don't need to prove it, and don't give a AFF if you believe me or not, or anyone else for that matter. To begin with I wasn't going to comment anyway till I seen your idiotic comment. Knew right off you was just trying to be a wannabe keyboard warrior that spews words from mouth like shit from ass that don't have a clue. So go try and be a tough guy with someone else cus l don't GAF.

      @@52Rambler Oh and by the way, Mr. Fake Expert, you don't need to break off the tail fin just to get the tail meat, just squeeze the tail and that would break the bottom part and you could pull out all the meat, including the meat of the tailfin... you do know that there is also meat in the fin heh Mr. Fake Expert? Funny too that you look down on people who use rolling pins and scissors, when you yourself have to use a knife just to get at the claw meat... I could bust that thing wide open with no knife at all. You are such a fraud.
