Apart from the aesthethical difference to aquire more taste it wouldve been better to use shallots ,apart from that the noodles had a few issues and the beef you used was kinda off but apart from that well done your cooking time and explanations are ok point thanks
As a former Executive Chef, I would suggest, since you are making this for yourself and your family, use a better quality cut, asked your local butcher for a beef shoulder filet (most tender cut after the filet mignon) or some market called the beef should filet "teres major", it's about $6lb, a 1lb filet is more than enough to make this dish, slice it thin against the plain, save the other haft for a stir-fry. The reason why I am suggesting going for a quality cut (you can also use ribeye) is to avoid using baking soda as a meat tenderizer. I think we all be to a Chinese restaurant and when ordering some kind of beef dish, the beef doesn't taste like beef, instead, it's mushy and just break apart, that is because to save money, they used the cheapest cut, which is usually the beef knuckle cut, than it is soaked and marinated with baking soda to break down the fiber.
I love the texture when using baking soda but hate the taste. I have been washing the meat after applying such them applying the condiments to avoid the metallic taste of the banking soda.
