Zucchini Lasagna :: What To Do With All The Zucchini Coming Out Of The Garden

  • What do you do with all of the zucchini that is coming out of your garden? I have been trying to experiment with different recipes on what to do with all the zucchini. I think I plant so many plants because they are easy to grow and yield a lot of fruit. In the video, when the lasagna comes out of the oven, I start to question the liquid in the casserole dish. My thought goes to excess oil from the cheese because there were no noodles to absorb it. I was talking it over with my husband and he thought about the freeze dryer. He suggested freeze drying the zucchini to remove all of the moisture. It would rehydrate with all of the yummy spaghetti sauce. Well I will do an update in the near future. I have already freeze dried the zucchini, so it will be happening again real soon. If you dont have a freeze dryer, I would suggest let them sit with the salt for longer. But either way, it was super yummy. If I didn't have the freeze dryer, I would still make this again.

    I’m jealous of your growing zone! We are quite far from a real harvest, but watching this makes my mouth water.

      The lasagna was soooo good. I was pleasantly surprised. I really liked the addition of the whole basil and oregano leaves. I'm gonna start doing that all the time. My husband suggested freeze drying the zucchini so control the moisture problem. I have freeze dried enough to make another pan and will be videoing an update on using the zucchini that way. 💜

      We are very fortunate to be able to plant early, but because it gets so hot so fast, we are already pulling plants out and thinking about what to start next. Have you grown garlic? We planted around 100 cloves in October and they never really did much. I think I'm going to throw them in the food processor and use them like chopped garlic. 💜

      @@louisianacookingandliving I do garlic every year! Did you grow soft neck garlic? They do best in hotter areas like yours. But chopped garlic is a great way to use them either way. It'll be convenient to have chopped garlic on hand.
