You hit the nail on the head.. sitting on the sidewalk, waiting for the coffee to drip, watching the traffic.. that's the authentic Vietnamese coffee experience. But if you like ice, you can ask for a glass of ice together with the dripping "phin" (pronounced as 'fin'), so that you can pour the ice cubes into the coffee glass as well. So when you order an iced milk coffee, they'll give you pre-brewed coffee like you said. But if you order iced milk coffee "pha phin" (pronounced 'fa fin'), it means you want it freshly dripped from the "phin", not the pre-brewed version. And it doesn't work with "to-go" orders obviously.
I think you should revisit Hanoi, Hanoi is currently bigger than Saigon, tourists only stay in the ancient Vietnamese and old French quarters and seeing the small narrow streets so they assumed Hanoi is small, but Hanoi is expanded so much in the past 15yrs, just take the Hanoi metro system and you will get the feel of a portion of the new Hanoi urban center and their new skyscraper.

Been living in Vietnam since 2013. First came here in 2009 on vacation and made several trips after that. Was working in bkk for a year when I finished came here and been here since. Look in craigslist for bike rentals. They’ll bring it to you. I used to live around the corner from there are there many times, across the street is a great bun moc soup place
You were walking by a big sports Center (inside the walks) that includes tennis courts, pool, weight room, and all kinds of dance and fitness classes. The shops sell sports clothes and equipment.
any "beef cake" or big sausages slice you eat is called "chả". So basically they can only be made from the freshest meat otherwise it will smell very bad and has a powdery texture. It's easily to make but very hard to get right. It's ok if you don't like it. Many Vietnamese don't like them either.
haven't heard you comment about the weather, current climate in HCM city... what was the current temperature when you video clipped ? wandering around. You have omitted a very important piece of information ( for the ww audience ) in Vietnam especially in south Viet Nam...
OMG! I still miss the sugarcane drink ( nước mía) flavor :)) in VN and could drink it everyday. The sugarcane import to North American taste like sugar water .

Crossing the road in Vietnam is very dangerous. You have to be careful with shoe polishers along the pavement. You might be deceived because I have that experience.
I thought you were going to get and ride your own bike, why not even a bicycle it is warm there so you don't have to deal with snow ice and sleet when riding a bicycle in open air
